1. Sausage and Noodle Soup
Ingredients (Serves 2):
- 250g sausages
- 70g noodles
- 50g carrots
- 50g green beans
- 1 tomato
- 10g common spices (salt/stock cube/fish sauce/pepper/MSG)
Instructions:
1. Prepare ingredients: Boil water, blanch carrots and green beans for 3-4 minutes. Boil 250ml water, add noodles and 1/2 teaspoon salt. Cover and let sit for 5 minutes. Drain and add a little cooking oil.
2. Sauté ingredients: Slice sausages. Sauté sausages with butter. Add green beans, carrots, and diced tomato, sauté for 3 minutes.
3. Cook noodle soup: Pour 350ml water, add noodles. Bring to a boil, season with salt, stock cube, and sugar. Turn off heat.
4. Finished dish: Sausage and noodle soup with vegetables is nutritious and delicious. Garnish with spring onions when serving.

2. Pork Rib and Meatball Noodle Soup
Ingredients (Serves 5):
- 1.5kg pork ribs
- 800g chicken broth (2 cans)
- 2 onions
- 1kg carrots
- 10g spring onions
- 300g ground pork
- 10g shallots
- 20 quail eggs
- 5g cilantro
- 10g fried shallots
- 500g noodles
- 35g chicken stock powder
- A pinch of salt/sugar/pepper
- 1 tablespoon cooking oil
Instructions:
1. Prepare pork ribs: Wash and cut into 4cm pieces. Boil in salted water for 5 minutes, then rinse with cold water.
2. Prepare other ingredients: Wash and cut spring onions. Wash and cut carrots. Peel and slice 1 onion, finely chop the other. Mix ground pork with chopped onion, shallots, chicken stock powder, and pepper. Shape into meatballs.
3. Prepare broth: In a pressure cooker, add prepared pork ribs, carrots, onions, salt, chicken stock powder, sugar, chicken broth, and water. Cook on soup mode for 5 minutes, then let it sit for 30 minutes. Remove scum and onions, add meatballs and quail eggs. Cook for another 15 minutes, then add spring onions.
4. Cook noodles: Boil noodles in salted water with a tablespoon of cooking oil for 4 minutes. Drain and rinse with cold water.
5. Serving: In a bowl, place noodles, pork ribs, carrots, meatballs, quail eggs. Sprinkle with fried shallots, cilantro, and pepper. Serve hot with chili fish sauce if desired.

3. Minced Meat Noodle Soup
Ingredients (Serves 4):
- 150g noodles (about 1/3 of a pack)
- 200g minced meat
- 1 corn
- 1 carrot
- 300g pumpkin (about 1/4 of a pumpkin)
- 150g shiitake mushrooms
- 2 eggs
- 1 spring onion
- 1 tablespoon minced shallots
- 2 tablespoons cooking oil
- A pinch of common spices (salt/stock cube/MSG/pepper)
Instructions:
1. Prepare ingredients: Wash and peel carrots, pumpkin, and corn. Cut into chunks. Soak shiitake mushrooms in salted water, then rinse with cold water. Wash and chop spring onion.
2. Cook broth: In a pot, add about 1 liter of water, then add carrots, pumpkin, and corn. Simmer for about 30 minutes. Remove vegetables and let cool.
3. Sauté minced meat: Heat 1 tablespoon of cooking oil in a pot. Add minced shallots and sauté until fragrant. Then add minced meat, 1 teaspoon of stock cube, and 1/2 teaspoon of pepper. Stir-fry for about 3 minutes until meat is cooked and lightly golden.
4. Cook noodles: Boil noodles in water with a tablespoon of cooking oil. After boiling for 10 minutes, drain and rinse with cold water to prevent sticking.
5. Cook noodle soup with minced meat: Cut cooked carrot, pumpkin, and corn into small pieces. Bring the broth to a boil, then add sautéed minced meat. Season with 2 teaspoons of stock cube, 1/2 teaspoon of salt, and 1/2 teaspoon of MSG. Add shiitake mushrooms, chopped carrot, pumpkin, and corn. Cook until boiling, then add noodles and simmer for another 1 - 2 minutes. Crack eggs into a small bowl, gently pour hot broth over the eggs to poach. Finally, season to taste, turn off the heat, add chopped spring onion, ladle noodles into a bowl, pour soup over, and place poached eggs on top. Serve immediately.

4. Mixed Vegetable and Pork Knuckle Noodle Soup
Ingredients:
- 1 pack of mixed vegetable noodles
- 500g pork knuckle
- 1/2 carrot
- 50g baby corn
- 100g oyster mushrooms
- 100g young chicken eggs
- 50g chives
- Pepper, salt, MSG, sugar, seasoning powder
Instructions:
1. Cut pork knuckle into bite-sized pieces, rinse, blanch in boiling water with 1 teaspoon of MSG and 1/2 teaspoon of salt. Cook mixed vegetable noodles in boiling water with 1 teaspoon of salt and 1 teaspoon of cooking oil, then drain and toss with a little cooking oil.
2. Peel and wash carrot, then cut into flower shapes. Wash oyster mushrooms and cut in half. Wash baby corn and cut in half or thirds. Wash chives and cut into sections.
3. When pork knuckle is tender, add carrot, baby corn, oyster mushrooms to the pot. Cook until tender with 1/2 teaspoon of sugar, 1 teaspoon of MSG, then add young chicken eggs and cook until done. Adjust seasoning to taste, then turn off the heat. Add chives.
4. Serve noodles in a bowl, top with pork knuckle, oyster mushrooms, baby corn, carrot, and young chicken eggs. Pour soup over and sprinkle with a little pepper for fragrance.


5. Crab Cake Noodle Soup
Nguyên liệu: (Cho 3 người)
- Nui ống vàng 200 gram
- Cua biển 1 con
- Giò sống 100 gram
- Sườn heo 400 gram
- Bạc hà 50 gram (dọc mùng)
- Cà chua 100 gram
- Sấu 3 quả
- Hành tím băm 15 gram
- Dầu điều 1 muỗng cà phê
- Bột nghệ 1/2 muỗng cà phê
- Gia vị thông dụng 10 gram (muối/nước mắm/hạt nêm/đường/bột ngọt/dầu ăn)
Cách làm:
- Sơ chế nui và các nguyên liệu khác: Bật bếp nấu 1 lít nước cho sôi, khi nước sôi lên thì bạn đổ 200 gram nui vào luộc, thêm 1/2 muỗng cà phê muối. Chờ nước trong nồi sôi già trở lại, bạn khuấy đều cho nui không dính vào nhau và đậy nắp, tắt bếp rồi để yên nui trong nồi khoảng 5 phút. Sau 5 phút lúc này nui sẽ chín và nở mềm đều, khuấy đều nui rồi đổ ra rổ rồi xả lại với nước lạnh. Trộn nui với 1 muỗng cà phê dầu ăn để những sợi nui không bị dính vào nhau. Bạc hà lột bỏ lớp vỏ mỏng bên ngoài, cắt lát xéo, bóp với muối khoảng 30 giây.
- Làm chả cua: Cho thịt cua đã luộc chín, giò sống, 2 muỗng cà phê hạt nêm, 1 muỗng cà phê hành tím băm, 1 muỗng cà phê màu điều, 1/3 muỗng cà phê muối, 1/2 muỗng cà phê tiêu, 1 muỗng cà phê nước mắm cho vào tô, phết đều tay cho chả hoà quyện đều các gia vị và dai ngon hơn. Lấy thêm tô khác, bạn cho sườn heo vào, thêm 1 muỗng cà phê nước mắm, 1 muỗng cà phê bột ngọt, 1/2 muỗng cà phê bột nghệ vào trộn đều cho thấm, ướp 15 phút cho sườn heo thấm gia vị.
- Nấu nước dùng: Bắc nồi lên bếp, bật bếp làm nóng nồi rồi cho vào 2 muỗng canh dầu ăn, cho 10 gram hành tím băm vào phi thơm, sau đó trút sườn heo đã ướp vào xào săn. Thêm vào nồi 1.5 lít nước, đun cho sôi thì hớt bọt bẩn rồi hạ nhỏ lửa hầm 1 tiếng cho sườn mềm. Sau đó, bạn vặn lửa lớn cho nước sôi lại, dùng muỗng tạo từng hình từng viên chả, từ từ cho chả cua thả vào nồi rồi đợi chả cua chín, nổi lên mặt. Tiếp theo, bạn thêm cà chua đã cắt múi cau cùng trái sấu đã gọt vỏ, nấu cho nước sôi lại.
- Nêm nếm: Nêm nếm nước lèo với 1 muỗng canh bột ngọt, 1/3 muỗng canh muối. Cuối cùng thêm bạc hà (dọc mùng) đã được sơ chế cùng với một ít hành lá và ngò rí cắt nhỏ vào nồi, khuấy đều rồi tắt bếp.
- Thành phẩm: Khi ăn, bạn cho nui đã luộc vào tô, chan nước dùng vừa nấu vào vừa ngập nui, thêm một vài lát ớt cho món ăn thêm hấp dẫn nhé!
