1. Cheese-coated Sweet Potatoes
Ingredients for Cheese-coated Sweet Potatoes:
- 1 bowl of crispy frying flour
- ¾ bowl of tapioca flour
- 2 sweet potatoes (about 400g)
- ¼ teaspoon of sugar
- ¼ teaspoon of salt
- ½ bowl of cheese powder
Steps to make cheesy sweet potato fries:
Step 1:
Wash the sweet potatoes, peel them, and cut them into bite-sized pieces. As you cut, keep a bowl of salted water nearby, dropping the pieces into it to prevent browning. Step 2: then remove the sweet potatoes, add them to a pot of water, and bring to a brief boil. Remember, just blanch them, then remove and let cool before placing in the freezer for about 30 minutes.
Step 2:
Mix tapioca flour with water to create a smooth, sticky mixture, then remove the sweet potatoes and coat them evenly with the batter.

Step 3:
Heat oil in a pan, fry the sweet potatoes until golden and crispy, then remove and drain.
Note: the secret to crispy frying sweet potatoes: Start with low heat, when they begin to turn slightly golden, increase the heat to high to evaporate the moisture faster, helping them stay crispy longer.
Step 4:
Put the sweet potatoes in a paper bag, add the cheese powder, and shake well.

2. Seasoned Potato Shakes
Ingredients for seasoned potato shakes:
- 4 potatoes
- ½ teaspoon of sea salt
- Seasoning powder
How to make seasoned potato shakes:
Step 1:
Peel the potatoes, prepare a bowl of water with ½ teaspoon of sea salt dissolved. After washing and peeling the potatoes, slice them thinly and immediately soak them in the salted water. Let them soak for about 15 minutes to prevent discoloration and enhance flavor.
Step 2:
Remove the potatoes from the water and drain them well, or use a paper towel to pat them dry.
Step 3:
Heat oil in a pan until hot, then add the potatoes and fry until evenly golden brown. Note: apply the frying technique mentioned earlier: start with low heat and then increase to high heat when the potatoes begin to turn slightly golden, until they achieve the desired golden color.
