- Chili powder: 3-4 teaspoons (Adjust the spiciness to taste, can use Korean chili powder for a better color and less heat compared to Vietnamese chili).
- Chili paste: 2-3 tablespoons. Soup powder (seasoning): 2 tablespoons. (Adjust saltiness to taste).
- Sugar: 2 tablespoons. (Adjust sweetness to taste).
- Five-spice powder: 1 packet.
- Beef stew seasoning powder (available in supermarkets): 1 packet. Cashew color: 1 tablespoon.

How to Make Pork Jerky
Step 1: Peel and crush ginger, garlic with half of the lemongrass mentioned above. For quicker preparation, you can grind them finely. Rinse the remaining lemongrass, lightly smash.
Step 2: Slice the sirloin along the grain. The longer the slices, the more visually appealing. Rinse with boiling water to remove all dirt and odor. Then, fill a pot with water covering the meat surface (do not add too much water as it relates to subsequent steps), boil until cooked. Once cooked, remove the meat, retaining the broth.
Step 3: Mix all crushed ginger, garlic, lemongrass, and the mentioned spices (sugar, soup powder, chili paste, chili powder, five-spice powder, beef stew seasoning, 1/2 tablespoon of cashew color) into the boiling water pot.
Step 4: After boiling, the meat can be kept whole or shredded into small, long strips along the grain.
Step 5: Put the seasoned broth pot on the stove, add the shredded or whole meat, simmer over low heat until the broth evaporates completely, allowing the flavors to infuse into the meat.
Step 6: Mix the remaining 1/2 tablespoon of cashew color evenly, then transfer the meat into a non-stick pan, dry-fry until it resembles shredded pork floss.

Note: When buying pork for making jerky, ensure it is cut in a way that preserves its size and length. This step is crucial because long pieces of meat are necessary for shredding into long, dry pork strips, which are essential for the texture and taste.
- 3 lemongrass stalks
- One packet of five-spice powder
- One packet of small cashew powder
- Sugar, soup powder, chili powder.

Step 1: Wash the meat, briefly blanch in hot water to remove dirt, then rinse thoroughly with cold water.
Step 2: Place the meat in a pot to boil. No need to fully cook, just cook until done.
Step 3: Remove the meat to cool, keeping the boiled water. While waiting for the meat to cool, add 2 lemongrass stalks into the boiling water.
