1.1 Ingredients Needed for Making Assorted Mooncakes
- Wheat flour: 150g;
- Softened butter: 4g;
- Cooking oil: 40ml;
- Sugar syrup: 110g;
- Salt: 1/6 teaspoon;
- Egg yolks: ½ Part of filling
- Sweet lard: 50g;
- Candied lotus seeds: 50g;
- Candied pumpkin: 70g;
- Sliced lime leaves: 2 leaves;
- Lightly fried sausage sliced thinly: 2 sticks;
- Five-spice powder: ½ tablespoon;
- Regular liquor or water: 50ml;
- Roasted glutinous rice flour: 40g;
- Pumpkin seeds: 50g;
- Roasted cashews: 70g;
- Roasted peanuts: 40g;
- Toasted sesame seeds: 15g;
- Mooncake syrup: 30g;
For the glazing: Take 1/2 egg yolk, 1 tablespoon fragrant liquor or a bit of water, a little yellow and red food coloring dissolved in a small bowl, sift through a strainer for smoothness.
