1. Traditional Chinese herbal braised duck recipe
Ingredients:
● High-quality 1kg duck meat
● Traditional Chinese herbs: 1 tael lotus seeds, 1 tael bitter melon, 0.5 tael hawthorn, 2 taels water chestnuts, 0.5 tael white fruit, 1 tael dried apple
● Fresh coconut water, purple onion, fresh sugar cane, ginger root
● Shitake mushrooms
● Rendered pig lard
● 1 cup of white wine
● Seasonings: Ground pepper, salt, seasoning powder, salty pepper salt.
Step 1: Prepare the ingredients
- After cleaning, the duck should be rid of any foul odor by rinsing with white wine and smashed ginger. Separate the internal organs.
- Boil the lotus seeds until soft.
- Remove the first layer of the bitter melon, soak in water for 1-2 hours, boil with salt until soft, rinse with cold water, and cut into pomegranate seeds.
- Soak the dried apple in water until it expands, set aside. Peel and clean the water chestnuts, wash thoroughly and cut into pomegranate seeds, set aside. Clean the shiitake mushrooms
thoroughly, remove the stems. Soak, wash thoroughly, and cut the shiitake mushrooms into pomegranate seeds.

Clean the braised duck and drain excess water
Step 2: Sauté the duck innards:
- Sauté the onions fragrantly with rendered lard, add the innards and sauté until half-cooked, then add the prepared ingredients such as lotus seeds, water chestnuts, shiitake mushrooms, dried apple, bitter melon, ma-rông, white fruit, and kim châm.
- Sauté evenly until everything is well mixed and half-cooked, while sautéing, season with salt, sugar, MSG, and pepper to taste.
- Place all the mixed ingredients into the duck's belly, secure with bamboo sticks. Then, fry the duck until golden brown along with pork fat, then turn off the stove.
Prepare a large enough pot, layer small pieces of sugar cane at the bottom of the pot, place the duck on top. Mix boiling water, coconut water, and a pinch of salt, pour into the duck pot. Boil until the duck is tender, then turn off the stove.

2. How to Cook Duck with Lotus Seeds
Ingredients
● Duck meat: ½ duck (about 700 gr)
● Dried lotus seeds: 50 gr
● Shiitake mushrooms: 15 – 20 small ones
● Coconut water: 1 fruit
● Onions, garlic, spices, seasoning powder, soy sauce, peppercorns, salt, wine.
How to cook duck with lotus seeds:
Step 1: Wash the duck meat thoroughly, rub with salt, add a bit of wine, ginger to remove any gamey smell, then rinse and cut into halves to drain.
Step 2: Marinate the meat with peppercorns, spices, and seasoning powder, soy sauce.
Step 3: Clean the shiitake mushrooms and lotus seeds, drain. Peel and wash the onions and garlic, finely chop them.
Step 4: Sauté the onions, garlic until fragrant, then add the duck meat, lotus seeds to the pot, add water and simmer for about 50 minutes until tender. Add the shiitake mushrooms and simmer for about 5 minutes, then turn off the heat.

Ingredients
● Young duck: 1
● Shiitake mushrooms, straw mushrooms: 50 gr
● Dried jujube: 20 gr
● Dried lotus seeds: 50 gr

● Shiitake mushrooms: 20 gr
● Lotus root: 100 gr
● Carrot: 100 gr
● Beef tenderloin: 250 gr
● Fresh coconut water, shallots, cooking oil, various spices.
How to Cook Eight-Treasure Duck:
Step 1: Remove the duck's head, cut off the feet. Mix a combination of salt, peppercorns, chopped shallots, chopped young ginger, then rub onto the skin, let it sit for 30 minutes.
Step 2: Fry the duck to render the fat. Prepare the mixture: lotus seeds, mushrooms, wood ear mushrooms, lotus root, all carrots, salt, pepper, chopped shallots.
Step 3: Grind the beef tenderloin with the intestines, duck gizzards, and liver. Mix half of the prepared mixture with the liver, beef tenderloin, intestines. Then stuff into the duck's belly and sew it back together with bamboo threads.
Step 4: Fry the duck with pork fat until evenly golden, and the fat is rendered thoroughly.
Step 5: Place the duck in a pot, pour in sweet fresh coconut water, simmer over low heat until the duck is tender. Then add all the additional ingredients, vegetables, and continue cooking until the duck is tender and cooked through, then turn off the heat.
