1. Cooking Chicken Congee with Vegetables
Ingredients: for 5 – 6 servings
- Chicken: 1 whole, approximately 1 kg
- Glutinous rice: 2 bowls
- Spring onions, fresh ginger, garlic
- White wine: 1/3 cup
- Spring garlic: 2 stalks
- Small carrot: 1 piece
- Chinese jujubes: 6 fruits
- Salt, peppercorns
How to Cook Vegetable Chicken Congee:
- Clean and chop spring onions into short segments.
- Wash and cut spring garlic into sections. Use only the white part.

- Peel and finely dice the carrot into pomegranate-sized pieces.

- Rub salt thoroughly over the chicken, then rinse it off to clean. Drain excess water.

- Rinse glutinous rice thoroughly and soak for about 1 hour. Then, strain and drain the water.

- Place the chicken in a large pot, add water, ginger, spring garlic, Chinese jujubes, and white wine. Bring to a boil, then simmer for about 40 minutes until the chicken is evenly cooked from inside out. (You can use a pressure cooker for faster and tender results.)

- Once the chicken is cooked, let it cool, then separate the meat and bones. Shred the meat into small strands.

- Continue boiling the chicken broth, add the soaked glutinous rice with a pinch of salt. Cook until the rice is soft and sticky.
Note: Maintain medium heat when the congee is boiling to prevent it from overflowing. Occasionally stir the pot with a spoon to prevent sticking and burning.

- When the rice expands and the congee thickens, add the shredded chicken to the pot. Season to taste and add finely chopped carrots and spring onions. Cook until the carrots are tender.

Ingredients:
- ½ cup glutinous rice
- 1 small bowl of brown rice
- 1 petite free-range chicken (around 1kg)
- 1 small piece of fresh ginger
- 2-3 stalks of scallions
- Perilla leaves: a bunch
- Seasonings: Salt, black pepper, fish sauce
- Fritters: 10 pieces (as desired)
Traditional Chicken Porridge Recipe:

- Soak both types of rice for at least 1 hour, then drain and grind finely.
- Clean and cut scallions into sections. Wash and peel ginger, then crush it.

- Clean the chicken and let it drain. Stuff the ginger and scallions into the chicken's cavity, then place it in a pot to cook. Bring to a boil, then reduce heat and simmer for about 10 minutes, followed by reducing to a gentle simmer for approximately 30 minutes, until the chicken is just cooked.

- Once the chicken is cooked, remove it to cool, then shred the meat (remove skin and bones).
- Use the chicken broth, add about 8 small bowls of water, bring to a boil, then add rice and simmer until it thickens. Stir occasionally to prevent burning. Add more water if the porridge becomes too thick.
- Once the porridge thickens, add the chicken, bring to a boil, and adjust the consistency with water if needed. Season with spices, fish sauce, and salt to taste.

- When serving, add scallions and perilla leaves. Enjoy it hot with fritters, ground pepper, and chili powder.
3. Chicken Porridge Recipe Using an Electric Rice Cooker
Ingredients needed:

- 100 grams of rice
- 100 grams of chicken breast
- 5 grams of dried shiitake mushrooms
- 3 lettuce leaves
- Several slices of ginger
- Seasonings: salt, cornstarch
Chicken Porridge Recipe Using an Electric Rice Cooker:

- Rinse the rice thoroughly and soak it in water for about 30 minutes. - Clean the lettuce and cut it into small pieces.

- Soak the mushrooms in water to soften, then slice them thinly. Cut the lettuce into thin strips.
- Clean and finely chop the chicken, add a pinch of salt, cornstarch, and a few slices of ginger. Mix well and let it marinate for a while.

- Pour water into a pot and bring it to a boil. Add the rice and a little cooking oil, simmer until the rice thickens.

- Add the marinated chicken, mix well. Then add the mushrooms, simmer for an additional 2 minutes, and add the lettuce. Season with a pinch of salt and seasoning powder to taste, then turn off the heat.
