Ms. Bay and her family take pride in personally grilling meat and serving noodles all day long at Xom Chieu Market, District 4.
30-Year Tradition of Grilled Meat Noodle: From Sidewalk Stall to Cozy Shop in Saigon's Market
Situated on the ground floor of Xom Chieu Market, Mrs. Ánh Tuyết's grilled meat noodle spot is a well-known destination for many. She's affectionately referred to as Mrs. Bay by the locals.
'In the past, our stall was outside the market, set up on the sidewalk. It's been over 30 years since then,' reminisces Mrs. Bay. Nowadays, the grilled meat noodle spot is located right in the heart of the market. Simply park your bike at the main entrance (for a fee of 5,000 VND) and take a few steps inside to find us.

With years of experience trading in the market, Mrs. Bay has developed relationships to source the freshest ingredients. Every day, she and her family head out early to procure the finest produce. Despite selling all day, items are restocked as needed to ensure quality.
Anh Phong, a Saigon resident who has known the eatery for 5 years, shares that the humble yet 'upscale' quality of the grilled meat noodle spot is what keeps him coming back. 'I discovered this place while visiting Xom Chieu Market with a friend. The portions are always generous. The fish sauce is perfectly balanced, sweet and savory, just like in the Southern region,' he remarks.

The meat is grilled to perfection, emitting a subtle smoky aroma, tender and infused with spices. The spring rolls are pre-fried yet maintain their crispiness. Beneath each soft strand of noodles lies a bed of finely chopped fresh greens. Another standout feature is the glossy layer of scallion oil paired with crunchy peanuts sprinkled on top.
When eating, simply drizzle the well-prepared fish sauce and mix thoroughly. Guests can request additional vegetables and fish sauce according to their preference. You can also order extra grilled meat or spring rolls separately. The eatery also offers homemade turmeric cakes. After finishing the meal, it's recommended to order a glass of pennywort or freshly squeezed orange juice from the adjacent beverage stall.

Mrs. Bay's establishment wins the hearts of diners not only because of the delicious food but also due to its affordable prices. If 5 years ago, a hearty bowl of grilled meat noodles cost 25,000 dong, nowadays, the same portion is just over 3,000 dong.
