
2.1. Irresistible Oat Peanut Butter Cookies Recipe
This dish is perfect for those with a sweeter tooth. The cookies have a firmer and chewier texture compared to pumpkin oat cookies. Particularly fragrant with the aroma of peanut butter and the distinct sweetness of honey.
1.1. Ingredients
- 100 grams oats/oat flour
- 150 grams whole wheat flour
- 120ml – 150ml apple juice or warm water
- 1/2 tsp baking soda
- 30g peanut butter
- 70g honey
- 25g dried coconut flakes
- 35ml coconut oil
- 10ml boiling water
1.2. Preparation Method
Step 1: Soak oats in warm water or apple juice for 30 – 40 minutes to soften. Apple juice adds natural sweetness enhancing the aroma and flavor of the cookies.

Step 2: Add whole wheat flour (or oat flour) + dried coconut to the oat mixture
Step 3: Combine coconut oil, honey, and peanut butter in a saucepan and simmer over low heat. Stir continuously and once it comes to a boil, remove from heat.

Step 4: Pour the mixture from step 3 into step 2. Knead the dough until the ingredients are well combined. Then roll out to a thickness of 2 – 3mm. Use a cookie cutter to cut into desired shapes.

Step 5: Preheat the oven 10-15 minutes before baking at 180°C. Bake the cookies for 25 – 30 minutes or until they turn a beautiful golden brown. Alternatively, air fry at 180°C for 15 – 20 minutes.
Depending on whether you prefer crispy or soft cookies, you can adjust the baking time accordingly.

2.3. Some notes:

This cake offers a refreshing taste with hints of cinnamon and ginger. Pairing it with melted chocolate enhances its flavor.
Ingredients:
- 1.5 cups oat flour (whole grain flour)
- ½ cup rolled oats
- 1 tsp cinnamon powder
- ½ tsp ginger powder
- 2 large eggs
- 1.5 cups mashed pumpkin
- 3 tbsp honey
- ½ tsp vanilla extract
- ¼ cup chocolate chips
Instructions:
- Peel and dice the pumpkin, then steam it until soft. Let it cool down and mash it into a smooth paste.

2.3. Super Simple Sweet Potato Oat Cookies
Ingredients:
- 500g sweet potatoes
- 50g oat flour
- 100g flaxseeds/pumpkin seeds,…
- 1 egg
- 1 pack unsweetened yogurt (can be replaced with fresh coconut water)
- Diet-friendly sweetener (can be replaced with honey)
- Black or white sesame seeds (optional)
Instructions:
Step 1: Steam and Mash the Sweet Potatoes
- Peel and wash the sweet potatoes, then cut into thick slices about 1cm. Soak the sweet potatoes in diluted salt water for about 15 minutes to reduce starchiness and discoloration, then rinse with cold water.
- Steam the sweet potatoes for about 10 – 15 minutes until completely soft.
- Then, blend the cooked sweet potatoes into a smooth paste using a blender or mash with a fork.

Step 2: Mix the Cake Batter
- Transfer the mashed sweet potatoes to a bowl, then add oat flour, flaxseeds, egg, yogurt, and about 6 teaspoons of diet-friendly sweetener (or 10ml honey). Mix the cake batter mixture thoroughly.
- If the batter is dry, you can add about 20 – 30ml of water.

Step 3: Bake the Cake
- Shape the dough into round balls, then flatten them. You can sprinkle white or black sesame seeds on the surface of the cake.
- Place the cakes in an oil-free air fryer, bake twice and flip between each bake:
First bake: Select 180°C and bake for 15 minutes.
Second bake: Select 150°C and bake for 10 minutes.

2.4. Chocolate Banana Oat Cookies
Ingredients:
- 120 grams whole oats
- 1 egg
- 2 ripe bananas
- 50 grams peanut butter
- 20 grams cocoa powder
- 5 grams cinnamon powder
- 10ml honey
- 25 grams almonds
- 25 grams chocolate chips
Method:
Step 1: Peel the bananas and cut them into small slices, then put them into a large bowl and mash them until smooth.
Step 2: Add the ingredients including oat flour, chocolate chips, cocoa powder, and cinnamon powder to the mashed banana bowl. Mix thoroughly by hand until all ingredients are well combined into a uniform mixture.
Step 3: Place the honey and peanut butter prepared in a double boiler. Keep the heat low and stir until the mixture is melted and smooth.
Step 4: Pour the mixture from step 3 into step 2, add the egg, and mix well.
Step 5: Prepare a baking tray, line it with parchment paper to prevent sticking. Then, shape the dough into small round pieces, bite-sized. Arrange them evenly on the tray, leaving about 1 – 2cm between each cake. Sprinkle sliced almonds on top of the cakes for decoration and added aroma!
Step 6: Preheat the oven to 180°C for 10 minutes, then bake the cake at this temperature for 12-15 minutes.
