Don, ram, or cao lau... all are simple yet delicious dishes, enough to make those far from home yearn for their roots.
Despite having to venture elsewhere for a living, people from Quang province (including Quang Nam and Quang Ngai) still carry with them the delicious, enticing dishes of their homeland. Many of these dishes have become so familiar that they can easily be found throughout the country.
Don
Unless you're from Quang, you'd hardly know about this dish. Don is a simple dish consisting of water, onions, and small clams. When eating, diners break crispy rice paper into small pieces and put them into a hot bowl of don. Don resembles clams but smaller and has a unique, delicious taste. It's that simple, but anyone who's tasted don once will remember it forever.
Ram shrimp
The ingredients for preparing ram shrimp typically include pork belly, river shrimp, medium-sized rice paper, eggs, along with various spices. These components are wrapped in rice paper, then fried over a small fire until evenly golden. When enjoying ram shrimp, you'll experience the rich, savory taste of the meat and the crispy texture from the shrimp. This dish is often served with raw vegetables.
Cao Lau
For a long time, the reputation of cao lau has been closely associated with Hoi An. Many people don't know or mistakenly think that cao lau and Quang noodles are similar, but in reality, their preparation and flavors differ.
Cao lau features yellow or pink noodles, served with pork, shrimp, and various raw vegetables. The noodles are crispy fried, and the broth is minimal. Many people often enjoy cao lau with boiled beansprouts but must maintain their crispiness.
Quang Noodles
Quang noodles are made from rice flour, thick, soft, and chewy. When eating Quang noodles, they are often accompanied by ribs, chicken, shrimp... The broth for this dish is prepared from various ingredients, and the accompanying vegetables are quite diverse, such as water spinach, laksa leaves, and basil... Quang noodles are considered the most distinctive and popular dish in Quang Nam.
Traditional Rice Cakes
These are a type of specialty, long-standing traditional cakes of the people from Quang province, made every Lunar New Year. The ingredients for processing only include glutinous rice and sugar. To make delicious rice cakes, the chef must carefully select the glutinous rice, dry it, then grind it into powder. The glutinous rice flour and sugar are cooked thoroughly, then a bit of fresh ginger is added to enhance the flavor, before steaming until cooked. Depending on the amount of sugar, the rice cakes can have a dark or light yellow color.
