GUIDE TO MAKING TASTY TAMARIND CRAB DISH
Step 1. Prepare the crab
Freeze the crab for 1 hour to immobilize them.
Place the crab in a large pot. Add some water. Cover and steam them for 8 - 10 minutes.
Use tongs to remove the crab from the pot. Rinse them under cool water to clean off any residue.

Step 2. Prepare the tamarind sauce
To make tamarind water, soak tamarind in boiling water for about 5 minutes, break apart each tamarind segment. Set aside until cool enough to handle. Strain the mixture to extract tamarind water.
To make tamarind sauce, mix tamarind water, fish sauce, and sugar in a bowl until well combined.
