Step 1: Select Ingredients
Choose fresh corn with vibrant green husks, smooth and soft silk, and kernels that are plump, even, shiny, and straight. Avoid overly large corn; opt for slender, well-proportioned cobs.
Opt for firm potatoes with smooth, golden skin, free from blemishes, cracks, or dark spots. Ensure they are not sprouting, as potato sprouts can be toxic.
Select fresh chayote, free from bee stings, with minimal ridges for easier peeling. Choose smooth, young chayote with glossy, fat skin.

Step 2: Prepare the Ingredients
Peel the su su, wash it thoroughly, then cut it in half and remove the seeds. Rinse the boa rô and cut it into slices.

Slice the salted turnip into thick pieces. Cut the mushroom stems into approximately 1 cm slices. Peel the carrots, removing the skin, and cut them into rounds or thick slices.


Peel the potatoes, soak them in a diluted saltwater solution for about 5 minutes to reduce starch, rinse thoroughly, and cut them into large cubes.



Cut the American corn into bite-sized chunks.

Step 2: Cook the Soup
Place a pot with about 1 liter of water on the stove, set the heat to medium. When the water boils, add salted turnip first, followed by mushroom stems and corn. Cook until the water simmers lightly.
After about 10 minutes, add potatoes, carrots, and sliced chayote to the pot to ensure thorough cooking and prevent overcooking or sogginess. Increase the heat and cook for approximately 15–20 minutes until all ingredients are tender and release their natural sweetness.

Season with an additional 2 teaspoons of vegetarian seasoning for a richer broth.
Ladle the soup into a bowl, garnish with chopped spring onions. The soup is now complete.
