A Weekend Guide to Revamping Crab Stir-Fried Glass Noodles
Ingredients:
– 500g of fresh sea crab (approximately 1 sea crab)
– Dried glass noodles: 250g
– Carrots: 1 piece, 2 cloves of wood ear fungus
– Onion: 1 piece
– Celery: 150g
– Spring onions, cilantro, bean sprouts: 100g
– Horn peppers: 3 pieces
– Garlic: 1 piece
– Seasonings: bouillon, MSG, pepper, cooking oil, fish sauce, chili powder
Instructions
Step 1: Prepare the Ingredients
– Clean fresh crab with water, steam until cooked, and remove the meat. Marinate crab meat with ½ teaspoon bouillon, ½ teaspoon MSG, ½ teaspoon fish sauce, 1 teaspoon cooking oil, ¼ teaspoon pepper for about 15 minutes.
– Soak dried glass noodles in warm water for about 10 minutes, then rinse with cold water, cut into suitable lengths for stir-frying, and drain. Add 1 tablespoon of oil, mix thoroughly to prevent the noodles from sticking.
– Soak wood ear fungus until it expands, then cut into small strips
– Peel and finely chop garlic.
– Clean and julienne carrots and chili.
– Peel onions, cut into small wedges. You can soak the knife in cold water before slicing the onions to avoid eye irritation.
– Clean celery, spring onions, and cilantro. Cut into pieces.
Step 2: Cook the Crab Stir-Fry
– Heat oil in a pan, sauté half of the minced garlic, add 2 teaspoons of cooking oil and a bit of chili powder. Stir-fry the crab meat until it changes color, then transfer to a plate and set aside.
