Ingredients:
- Pork: 400g
- Shallots: 3 bulbs
- Seasonings: cooking oil, fish sauce, seasoning powder, sugar, soy sauce
Method:
- Clean the pork, cut into bite-sized pieces, blanch in boiling water, remove and drain excess fat, then add 1 tablespoon of cooking oil and stir well to reduce fat.
- Stir until the pork turns golden brown and most of the fat is rendered. Add finely chopped shallots, 3 tablespoons of fish sauce, 1 tablespoon of seasoning powder, 1/2 tablespoon of sugar, 1/2 tablespoon of soy sauce, and stir well.
- Stir for a while longer, then transfer to a plate and serve with hot rice.

Ingredients:
- Pork belly: 250g
- Fish sauce, black pepper, seasoning powder
- Purple onions: 1 bulb

3. Pork stir-fried with fermented fish sauce
Ingredients:
- Beef thigh: 400g
- Dried shallots: 2 bulbs
- Scallions: 2 stalks
- Fish sauce, soy sauce, cooking oil
Method:
- Slice the meat into pieces, finely chop the shallots separately.
- Saute the white part of the shallots or dried shallots with oil until fragrant, then add the meat and stir-fry, season with sugar, and add fish sauce to make the meat firm.
- Season the fish sauce to taste, then turn off the stove, add chopped spring onions, and stir.

4. Pork belly stir-fried with sesame seeds
Ingredients:
- Pork belly: 300g
- Finely chopped lemongrass and garlic
- Fish sauce, honey, five-spice powder
- Spring onions, toasted sesame seeds
Instructions:
- Cut the meat into bite-sized pieces, marinate with 1 tablespoon of fish sauce, 1 teaspoon of honey, 1 teaspoon of five-spice powder
- Wash and finely chop the lemongrass
- Then mix well and let the meat marinate for about 2-3 hours. If short on time, add a little cooking oil to marinate the meat faster.
- After marinating the meat for a while, heat a pan, add cooking oil and sauté garlic and lemongrass, then add the meat and stir-fry until firm. Cover with a lid, reduce heat, and let the meat cook quickly without burning. Occasionally open the lid and stir to prevent the meat from being too moist.
- Arrange on a plate, garnish with spring onions and sprinkle a bit of toasted sesame seeds on top for aroma and presentation.

5. Sweet and Savory Stir-fried Pork
Ingredients:
- Pork belly: 300g
- Freshwater prawns: 300g
- Dried shallots: 3 bulbs
- Garlic: 3 cloves
- Sugar, salt, seasoning powder, fish sauce
Method:
- Clean the meat thoroughly. Cut into moderately thick pieces, about 1/3 of a finger's length. Marinate with finely chopped shallots, garlic, 1 tablespoon of sugar, 1/2 teaspoon of seasoning powder, and 1 teaspoon of salt.
- Clean the shrimp, remove the whiskers and legs, then toss with 1/2 teaspoon of salt. Remember to use a strainer to toss the shrimp instead of chopsticks.
- After marinating the meat for about 15 minutes, heat a pan over high heat, pour the meat in and stir-fry over high heat to make the meat edges brown and visually appealing without drying out.
- When the meat starts to brown on the edges as shown in the picture, flip the meat and reduce the heat.
- Continue cooking over medium heat until the meat is cooked through and browned evenly on the edges as shown. Since we marinated with shallots and garlic earlier, keeping the heat low at this stage will prevent them from burning.
- Lower heat also helps reduce the fat from the meat, making it less greasy. At this point, tilt the pan and spoon out excess fat.
- Once the meat is cooked, switch to frying the shrimp. Turn the heat to high, and when the shrimp start turning pink, gently tilt the pot/pan to flip the shrimp.
- Repeat this process until the shrimp turns a beautiful pinkish-orange color like this. Adjust the seasoning to taste.
- Pour the shrimp into the meat pan, add a few drops of soy sauce for a richer color. Also, remember not to use chopsticks to stir, but gently tilt the pan. This will keep the shrimp intact, juicy inside with crispy shells.
- Finally, adjust the seasoning once more, adding sugar or salt according to your family's taste before serving on a plate.
