Ingredients:
+ Broken rice: 300g.
+ Regular rice: 60g.
+ Pork ribs: 300g (4 pieces, bone-in).
+ Pork skin: 100g.
+ Tomato: 1 piece.
+ White radish: 150g.
+ Carrot: 150g.
+ Rice flakes.
+ 1 chili, 4 garlic cloves, 3 shallots.
+ Spring onions: A small handful.
+ Lime: One piece.
+ Seasonings: Fish sauce, salt, seasoning powder, MSG, rice vinegar (100ml).
+ Ribs marinating spices: 1 tablespoon honey, 1 teaspoon salt, 2 tablespoons tasty fish sauce, 1 tablespoon oyster sauce, 2 teaspoons sweetened condensed milk, 2 tablespoons cooking oil, 2 tablespoons sugar, 1 tablespoon soda water, a few drops of lime, a bit of finely chopped garlic and shallots.
Combine the ribs with the prepared marinating spices in a bowl, mix thoroughly for the flavors to infuse. Cover the bowl with plastic wrap and let it marinate for about 2-3 hours.

Method:
- Cook rice:
Mix both types of rice, rinse thoroughly, put them in a pot, and add water to cook as usual. For delicious rice, use the following formula: Rice measurement = Water measurement + an additional 1/2 measurement of water. For example, 1 cup of rice requires an additional 1.5 cups of water.
- Grill ribs:
You can grill the ribs over charcoal or in the oven. When the ribs are almost cooked, take them out, dip them back into the seasoned bowl, and continue grilling until the ribs are cooked and evenly golden, emitting a delightful aroma. Note to keep the heat moderate to avoid quick grilling, ensuring the ribs are more delicious. The secret to achieving a fragrant and appealing golden color on the ribs is to brush a layer of honey on the surface when the meat is almost cooked.

- Make pickled vegetables.
Shred carrots and white radish into a bowl.
Pour 100ml of vinegar into a cup, add 3 tablespoons of sugar, half a tablespoon of salt, stir well until dissolved, then pour it into the bowl of shredded carrots and white radish.
Turn and press the carrots and cabbage evenly into the vinegar, use food wrap to cover and soak for about 1 hour.

- Pork skin: Boil the skin with a pinch of salt, when cooked, the skin will contract. Take the cooked skin into a bowl of cold water, add some ice, soak for 5 minutes, then remove and drain.
Slice the boiled skin thinly and mix it evenly with rice flakes.

- Cucumber and Tomato: Cut into slices.

- Prepare scallion oil: Boil a quantity of cooking oil in a pan, then add a cup of finely chopped scallions and a bit of sugar, salt.
- Garlic, Chili: Finely chop.
- Make fish sauce: Prepare half a cup of clean water, add 2 tablespoons of sugar, 2 tablespoons of fish sauce, stir until the sugar dissolves. Then add finely chopped garlic and chili, mix well. A small note is to add garlic and chili later so that they float on the surface of the fish sauce bowl.
