Step 1: Prepare the ingredients

- Spring onions: remove roots and old leaves, wash thoroughly, and finely chop.
- Shallots: peeled and finely sliced or pounded into small pieces.
- Lemongrass: remove roots and old parts, lightly crush and cut into 3-4 cm pieces.
- Assorted vegetables for dipping in hotpot broth: discard roots, stems, and old leaves, crush lightly, then wash thoroughly with salt water, and drain.
- Tofu: cut into small bite-sized pieces and fry until golden brown.
- Beef bones: clean and chop into bite-sized pieces.

Preparing Beef
Peel and clean ginger and garlic, then finely chop or slice as desired.
Season beef with salt, wash thoroughly, then slice thinly and marinate with prepared ginger and garlic along with spices, mix well, and marinate for 20 minutes before cooking (season to taste).
Preparing Crab
Place the field crab in a large bowl, add an extra teaspoon of salt, and vigorously shake several times to remove all dirt, then rinse thoroughly with water.
Separate the crab claws and use a toothpick to remove any remaining mud, placing them in a separate bowl.
Wash the crab meat again with water, then soak in diluted salt water for about 15 minutes.
After 15 minutes, grind or crush thoroughly with a pinch of salt.
Then mix the ground crab with 1.5 – 2 liters of clean water, knead for 5 minutes, filter through a sieve to extract the crab water.
Step 2: Making broth
Blanch the bones in boiling water about 2-3 times to remove any unpleasant odor.
Place the bones in a large pot with 1.5l - 2l water along with some onions, ginger for about 30 minutes, then remove all the bones, onions, and ginger, only keep the broth. (During cooking, skim off any foam so the broth remains clear)
Step 3: Cooking countryside crab hotpot
Heat the pan, add oil, heat until the oil is hot, then add thinly sliced onions, sauté until golden brown and fragrant, then remove the onions and stir-fry the tomatoes.
Add 1 tablespoon of fish sauce, stir until the tomatoes are soft, then add the crab chunks and stir-fry for about 2-3 minutes until the crab is tender, then turn off the heat.
Pour the filtered crab water and broth into a pot, bring to a boil, then scoop the crab meat into a separate bowl.
Season to taste with spices, then turn off the heat.
Step 4: Completion
Scoop the hotpot into a dedicated pot for hotpot, arrange tofu, crab roe, beef around the hotpot pot.
