Rarely will you find a snail in Vietnam with such mythical tales and distinctive flavors like the Bà Đen mountain snail from Tây Ninh. They carry the essence of rare and precious herbs.
In Vietnam, perhaps only the Bà Đen mountain snail in Tây Ninh province holds the most folklore and uniquely exotic flavor. This snail species is regarded as a sacred creature of this land.
The Legend of the Bà Đen Mountain Snail
Legend has it that in the late 18th century, a young man named Lê Sỹ Triệt (originally from Tràng Bảng district, present-day Tây Ninh province) possessed great patriotism and high talent. He had to part ways with his beloved, Lý Thị Thiên Hương, to join the army.
During a visit to the mountain to pray for peace for loved ones, she was attacked by a villain, and to preserve her chastity, she threw herself off the mountain to sacrifice herself. The coins she used to help the poor fell into the abyss and transformed into small snails on the mountain wall, thus giving rise to the Bà Đen mountain snails.

The Bà Đen mountain snail has a flat shape and is black-brown in color.
A Snail Species Feeding Solely on Precious Herbs

Embarking on the quest for Ba Den Mountain snails in Saigon.
To master the art of preparing Ba Den Mountain snails into a delicious dish requires ample experience. During a visit to the Nam Bo Grilled Village restaurant on Nguyen Thi Dieu Street, I was fortunate to receive some valuable tips from the head chef.
In contrast to other types of snails, Ba Den Mountain snails do not need to be soaked in chili or lemongrass to release sand because simply rinsing them with water cleanses them entirely of sand. After thorough washing, they should be cooked immediately without delay. The head chef at Nam Bo Grilled Village restaurant emphasized that this method ensures the snails retain their valuable nutritional properties.

The snail meat is both succulent and crispy, exuding the aroma of rare and precious herbs.
