1. Ingredients Needed

Durian 300g
5 egg yolks
Condensed milk 150ml
Fresh milk 200ml
Fresh cream 200ml
Sugar 50g
Honey 10ml
Kumquat juice 20ml
Tools Needed: blender, egg beater, saucepan, molds

2. Steps to Follow
Firstly, refrigerate the fresh cream upon purchase. Then, blend egg yolks with 50g sugar and 10ml honey until the mixture is smooth and unified.

Next, combine condensed milk and fresh milk in a pot, stirring well, then gently heat. Stir continuously on low heat until it barely simmers.

After the milk is heated, immediately blend it into the previously mixed egg mixture, ensuring a smooth integration.
For the durian, remove the seeds, keeping the flesh, and cut it into smaller pieces for easier blending.

Blend 20ml of kumquat juice, prepared durian, and a few spoons of the egg-milk mixture until the texture is smooth. Following that, add the remaining egg-milk mixture and blend again for uniformity.

Take the chilled cream from the fridge and whip it until fluffy. Gradually mix in the blended durian mixture, continuing to whip for a smooth texture.

After mixing the ingredients, pour the cream into the prepared mold. Then, cover the mold with plastic wrap and place it in the refrigerator for 12 hours. Once the ice cream is frozen solid, take it out and use a spoon to scoop it into a bowl for serving.
