Ingredients:
- (Makes 6 muffins)
- 3/4 cup whole wheat flour
- 1/2 cup pure rolled oats
- 1/4 cup packed brown sugar
- 2 tablespoons flaxseed meal
- 1 teaspoon ground cinnamon
- 1/2 teaspoon baking soda
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 egg white
- 1 tablespoon canola oil
- 1/4 teaspoon vanilla extract
- 1 small ripe banana, mashed
- 1/2 cup milk
Instructions:
- Preheat oven to 350 degrees and line a muffin pan with 6 muffin liners. In a bowl, mix together whole wheat flour, oats, brown sugar, flaxseed meal, cinnamon, baking soda, baking powder, and salt.
- In a separate bowl, mix together egg white, oil, vanilla, banana, and milk. Gradually mix the flour mixture into the egg mixture until fully combined. Divide batter into six muffin cups. Bake for 15–18 minutes.
2. Oatmeal Fruit Salad
Ingredients:
- 3 Strawberries
- 1 Banana
- 10 Black Grapes
- 30g Rolled Oats
- Boiling Water
Instructions:
- Cut strawberries and banana into bite-sized pieces, leave grapes whole (other fruits can be substituted)
- Boil water and pour about 3/4 over rolled oats. Stir until oats are cooked.
- Mix cooked oats with fruit and enjoy (can be chilled in the fridge for 15 minutes before serving). Optionally, add unsweetened yogurt.
3. Oatmeal Porridge
Ingredients (Serving 4 for Breakfast):
- 3/4 cup ground golden oats
- 3 cups milk
- 1/8 cup pure olive oil
- 1 teaspoon butter
- 1 small onion, finely chopped
- 450g shrimp, peeled and deveined
- 1/4 teaspoon salt
- 1/8 teaspoon ground white pepper
Instructions:
- Bring milk to a boil in a saucepan, then add oatmeal and simmer over low heat for about 10 minutes. Stir frequently while cooking to make the mixture smoother.
- Heat olive oil and butter, then sauté onion and add shrimp. Season with salt and pepper, cook for 4–5 minutes.
- Pour the shrimp mixture into the oatmeal saucepan and continue cooking for 10–15 minutes, serve hot.

4. Diet Oatmeal Cookies
Ingredients:
- Instant oatmeal: 350 grams
- 50 grams Flour
- 100 grams Pumpkin seeds
- 50 grams Sliced almonds
- 2 tablespoons Almond flour
- 100 grams Raisins
- 50 grams Butter
- Water, salt, sugar (optional), a pinch of cinnamon for fragrance
- All other nuts if desired
- A pinch of cinnamon for fragrance
- Nuts should be toasted to enhance fragrance.
Instructions:
- Grind instant oatmeal in a blender. Pour all dry ingredients into a large bowl, mix well.
- Melt butter, warm water to about 60-80 degrees. Pour everything into the mixed mixture. Knead evenly into a uniform mass. Let it rest for 15 - 20 minutes for the oatmeal to absorb enough water and swell.
- Roll out thinly, cut into bite-sized pieces (use cookie cutters for beautiful finished products), or shape into flattened balls.
- Bake in an oven at 180 degrees Celsius for 15 minutes (because my oven is not specialized and only has 5 heat levels, I bake at heat level 4, which is about 180 degrees Celsius). Check halfway through the baking time, remember to flip the cookies and rotate the tray if using an oven without a convection fan to ensure even baking. After the first bake, let it cool, lower the oven temperature to about 150 degrees Celsius (heat level 3) to dry for another 30 minutes.
- The cookies will have a sweet, nutty taste from raisins, pumpkin seeds, oatmeal, and almonds, easy to eat. For those who prefer sweeter taste, you can increase the sugar according to your taste. Thin nuts may not need to be toasted as baking and drying will cook the nuts. However, it is still recommended to toast them.

Instructions:
- Place 1/4 cup cream cheese yogurt at the bottom of a glass.
