Step 1: Prepare the Ingredients
- Clean the beef tendon, boil for about 5 minutes (add smashed lemongrass), remove and let it cool, then cut into bite-sized pieces. For the lean beef, you can leave it whole or marinate it with chopped onions, garlic, seasoning powder, shrimp paste, and a bit of black pepper.
- Oxtail: Clean the outer skin by scalding, scrape off the burnt layer, and wash with clean water. Cut into bite-sized pieces. Parboil the oxtail for 1 minute with smashed ginger and 1 teaspoon of salt. Then pour out the water and wash the oxtail again for a thorough cleaning.

- Smash 4 lemongrass stalks, finely chop 1 remaining stalk for the dipping sauce. Clean the ginger, cut into thin slices.
- Peel and clean the lotus root and taro, then cut into pieces. Cut the tofu into squares. Peel the onion and slice it.
- Roast the cinnamon and star anise in a pan over low heat for fragrance.
- Cut off the mushroom stems, soak them in diluted saltwater, and wash them with clean water.
- Remove wilted leaves from the vegetables, soak in saltwater, and wash thoroughly.
