Instructions for Making Bitter Melon and Ginseng Drink
Step 1:
Prepare the ingredients including bitter melon, ginseng, dried lotus seeds, dried longan, pandan leaves, and rock sugar. Wash and slice the bitter melon. Cut the ginseng into small pieces. Divide the dried lotus seeds and dried longan into quarters.
#ProTip: Choose older bitter melons to prevent the drink from turning sour.
Step 2:
Cut each sugar cane into quarters and place them in a pot. Next, layer the sliced bitter melon, followed by ginseng, dried lotus seeds, and dried longan on top. Add 3 liters of filtered water to the pot and simmer over medium heat on the stove.
Step 3:
Once the water in the pot starts boiling, reduce the heat to low, cover the pot, and simmer the bitter melon for 1 hour. Then, uncover the pot, add pandan leaves, and continue simmering for another 10 minutes (without covering) before removing from heat.
#ProTip: If you notice the water level decreasing while cooking, you can add more water, but the maximum additional amount should be 1 liter!
Step 4:
Remove the bitter melon pulp, then strain the sam water through a sieve to remove any remaining sediment at the bottom of the pot.
Step 5:
Taste the sam water to check if it suits your family's taste. If you prefer it sweeter, you can add 100g of rock sugar (optional) while the sam water is still warm and stir until the sugar dissolves. Let the sam water cool completely before pouring it into clean glass bottles or jars, store in the refrigerator, and consume within 3 days for the best taste!
