Many have misconceptions about the famous dish in Nha Trang, thinking it's made from a fish called 'dam,' but that's not the truth.
Bun La Ca Dam - A Misunderstood Culinary Gem
The name 'bun la ca dam' originates from the distinctive broth preparation of this dish. The broth is clear, not fishy, and low in fat, cooked from various types of fish, depending on each chef's recipe. Before cooking, the fish is deboned and cut into small pieces.
Typically, chefs select fish with high protein, sweet flesh, and firm texture like snakehead fish, barramundi, catfish, or tuna. Fresh fish is chosen to prevent mushiness during cooking.

The noodles used for this dish must be sourced from Thanh My village, Ninh Hoa town. These noodles are twisted into thin, small strands using a bowl's edge, with each noodle placed on a round piece of banana leaf to prevent sticking.
Eateries nowadays often enhance the dish with jellyfish or fish cakes to introduce new flavors. The soft noodles paired with clear, non-fishy broth make the dish rich and endlessly satisfying.
On top of the bowl of noodles, you'll find finely chopped spring onions, thinly sliced shallots, and a bowl of neatly cut raw vegetables.

Bun Ca La Dam is perfect for both breakfast and dinner. You won't have trouble finding this dish in the city center or on the way to the airport.
Guests can enjoy a hearty bowl of noodles at Năm Beo's eatery at the corner of Phan Bội Châu apartment building or at 170 on Bạch Đằng street, open only during the day. Alternatively, head to 87 on Yersin street or Cây Bàng eatery on Hàn Thuyên street. These two addresses are open for breakfast and dinner.
Not only in Nha Trang, but travelers can also find this dish in some other places in Khanh Hoa. The price for a bowl of noodles ranges from 20,000 VND. If you want to add fish and broth, you can order separately.
