Rice serves as a staple grain across most Southeast Asian nations, including Vietnam, serving as a primary daily sustenance source. While rice, when cooked, offers ample calories for the body, individuals grappling with excess weight or obesity may shy away due to its elevated calorie content.

However, according to a recent report by Roberto A. Ferdman conducted by researchers in Sri Lanka (led by Sudhair James), incorporating a smidge of coconut oil (roughly 3% compared to the rice quantity) during cooking can aid in reducing calorie content upon rice being cooked. Roberto A. Ferdman analyzed that coconut oil possesses the ability to cool rice grains, thereby modifying the internal structure. Specifically, the lipid content in coconut oil facilitates alterations in the rice grain structure and reduces digestible starch content, subsequently reducing calories. Sri Lankan researchers experimented with 38 different varieties of white rice, ranging from the least to the most calorie-dense. The conclusive results indicated that coconut oil could lower calorie content in rice by approximately 10-12%, a percentage that could escalate to 50 or even 60% for superior-quality rice varieties.
Cooking instructions:
Step 1:
Boil water for cooking rice as usual.

Step 2:
Once the water is boiling, add approximately 3% coconut oil (compared to the amount of rice) into the water pot.

Step 3:
Add the rice and cook until tender.

Step 4:
Transfer the cooked rice into the refrigerator, leave it for about 12 hours, then take it out and serve. Allow it to come to room temperature before serving.
