To change network logos, your device must be jailbroken. If your device hasn't been jailbroken yet, you can refer to articles on jailbreaking iOS 7.0 to 7.0.6 and iOS 7.1 to 7.1.1.
Modifying network logos on jailbroken iOS 7 devices. In this article, I'm using an iPhone 4 running iOS 7.1.1.
Step 1: Launch Cydia after jailbreaking.
Step 2: After waiting for Cydia to load data, select the search icon as shown below.
Step 3: Type Zeppelin into the search bar, then hit search
Step 4: Select Zeppelin as shown below
Step 5: Tap on Install
Step 6: Continue to press Confirm and wait for the Tweak to download
Step 7: After installing the Tweak, your device will need to Restart the SpringBoard
Step 8: Once your iPhone finishes booting, it will come pre-installed with 1 default logo instead of the network logo. You can change it by going to Settings > Select Zeppelin near the bottom of the page
Step 9: Press Theme and choose from a selection of available logos
Step 10: If you want to add text instead, disable Enabled and select Carrier Text

Write the desired name. Here, you can also insert emoji icons just like regular text. Then, select Save
