Ms. Vu Thi Hanh (26 years old) – currently serving as Assistant Manager at Chen By NamChen's Doan Tran Nghiep branch – shares: “Regardless of our role in the restaurant, when we first join, we learn the basics: greeting guests, cleaning tables meticulously, arranging seats promptly, then progressing to grilling, carving meat, and tableside service”
Ms. Hanh also revealed that in their early days here, many times the managers, assistant managers, and even the restaurant directors didn't hesitate to roll up their sleeves and demonstrate the smallest tasks like table wiping or grill plate replacement to each employee. Employees who haven't met the restaurant's standards aren't allowed to serve customers.

They must unlearn relying on MSG, artificial flavorings, preservatives, etc., to instead strive to enhance the natural sweetness of the dish without the aid of harmful chemicals for their customers' health.
They must learn to cook a dish and infuse it with all the care and reverence reserved for their most beloved ones.
