Year-end and New Year celebrations are the ultimate occasions for office workers to splurge on feasts and revelries! There are plenty of reasons to dine out: bidding farewell to the old year, gathering with friends, welcoming the new year, warding off bad luck, wishing congratulations... and with the chilly, drizzly weather, dining out becomes even more appealing!
When it comes to dining out frequently, I usually opt for places that meet specific criteria: delicious for drinking, abundant food, cozy ambiance, easy to eat and chat, and importantly, affordable!

During our latest visit to Đức Trọc Hot Pot on Thái Thịnh, we were impressed by its spacious and beautiful setting, perfect for conversation, and most importantly, the reputation for delicious food. Huddling around a pot filled with the aroma of pineapple, tomato, onions, and more on a chilly day was just perfect, don't you think?
Đức Trọc Hot Pot is already famous for its hot pot, so I didn't have much to complain about. What surprised me the most was the variety of appetizers available here, perfectly paired with drinks! I used to think that Đức Trọc Hot Pot only specialized in hot pot, but I was completely wrong! From beef, chicken, goat, pork... to fish, frog, shrimp, crab, from steamed, stir-fried, grilled, roasted... to barbecue, smoked... you name it, they have it on their menu. You can indulge to your heart's content!

While enjoying a glass of wine at Đức Trọc Hot Pot that day, we relished the specialty dish of braised buffalo – a delicacy from the Northwest region. Each piece of meat, dried on the outside, exuded the aroma of wood-fired smoke, with a rich golden-brown exterior and a tender, pink interior, paired perfectly with the wine! This braised buffalo meat is said to be exceptional because it's taken from the clean, lean part of mountain-grazed buffalo, making it firm, compact, fragrant, and more flavorful than ordinary meat by leaps and bounds...

On a chilly day, savoring a small piece of braised buffalo meat, infused with the flavors of smoke, garlic, ginger, Sichuan pepper, dried chili, and a hint of sweetness from sugar, warmed the heart. Engrossed in conversation, I learned how meticulously this delicious dish is prepared by people in the highlands, sometimes taking 2 or 3 months to prepare, burying the meat in hot ash until tender, yet still retaining the smoky aroma from the kitchen.
If you want to make this dish at home on a chilly day, we can simplify many steps but still achieve a taste quite similar to the real thing!

Braised buffalo meat exudes a rich, fragrant aroma that pairs well with wine
Preparing the ingredients for braised buffalo meat at home
+ 2kg buffalo sirloin
+ Ginger, lemongrass, garlic, Sichuan peppercorns, dried chili, sugar
Clean and slice the meat into pieces about 7x15cm, 3cm thick, tenderize the meat. Mix about 1 piece of ginger, some lemongrass, 3 dried chili peppers, 3 cloves of minced garlic, crushed Sichuan peppercorns with the buffalo meat, marinate for about 3 hours. Adjust seasoning according to taste preference (usually 2 tablespoons of salt, 1 tablespoon of MSG/sugar) until well seasoned.
Skewer the meat and dry them over charcoal fire, avoiding direct flames to prevent charring. With this size, the meat will be cooked in about 1 - 2 hours. You can dry them longer if you want them to last longer.
Although intricate, a more authentic method is the traditional wood-fire method: maintain a low fire, hang the meat about 70cm from the flame for 2 days, then transfer to a steamer and steam for about 4 hours. Finally, sun-dry until done!
