Step 1: Prepare Ingredients
Clean the carp, cut into bite-sized pieces, marinate with 1 teaspoon of seasoning powder, 1 teaspoon of salt, and 1 teaspoon of pepper for about 15 minutes to absorb the flavors.

Thinly slice the pork belly, wash and thinly slice the ginger, and chop the chili into small pieces.

Layer in a pot in the following order: a layer of ginger, ginger, meat, a layer of fish, and a final layer of ginger on top, pour water until the fish is submerged.

How to make pepper-braised carp
Step 1: Prepare the ingredients
Clean the carp, cut into bite-sized pieces.
Peel and finely chop purple onions, turmeric, ginger, and lemongrass.
Wash and finely chop coriander and cilantro.

Step 2: Marinate the fish
In a bowl, mix together lemongrass, purple onions, turmeric, and finely chopped ginger with the following seasonings: 1 teaspoon of pepper, 1 tablespoon of fish sauce, 2 teaspoons of seasoning powder, 1 teaspoon of MSG, then stir well to let the fish absorb the flavors, marinate for about 30 minutes to 1 hour.

Step 3: Cook pepper-braised carp
Place a pot on the stove, add 3 teaspoons of sugar and stir to make caramel. Once the sugar is dissolved, foamy, and turns dark brown, add some filtered water to the pot.
Next, add all the carp into the pot to braise with about 400ml of filtered water so that the fish is fully submerged. Boil the fish over medium heat for about 2 hours, until the fish turns deep golden, the fish stew reduces, becomes glossy and thick. Then add coriander, cilantro, and pepper to finish.

Place a pan on the stove, add 2 tablespoons of sugar and 2 tablespoons of hot water to the pan and stir until the mixture turns caramelized, then add 500ml of hot water.
Next, add the carp, ginger, chili peppers, and lemongrass into the pan. Reduce the heat to low and simmer for about 45 minutes until the liquid reduces to less than half, then adjust the seasoning to taste and turn off the heat.
