1. Korean-style Braised Tofu

Ingredients for Korean-style Braised Tofu
- 500g young tofu
- 3 pieces of shiitake mushrooms
- ½ onion
- 2 cloves of garlic
- 2 red or green chili peppers
- 2 tablespoons Korean chili powder
- 1 teaspoon Korean chili paste
- 2 tablespoons soy sauce
- 2 teaspoons shrimp paste
- 1 tablespoon corn syrup
- 1 tablespoon minced garlic
- 2 tablespoons fish stock or dashima stock (a broth made from kelp with fish bones, dried fish, or dried tuna...)
How to make braised tofu
- Rinse the tofu thoroughly in cold water, pat dry with a cloth or paper towel. Cut into bite-sized pieces.
- Clean the mushrooms, onions, and chili peppers. Slice the onion into wedges, chop the green onions, slice the mushrooms lengthwise, and slice the chili peppers into rings.
- Mix all the ingredients in the sauce section together.
- Using a small pot, arrange the onions at the bottom and then layer the tofu on top. Then, pour the sauce mixture over the tofu. Cook over medium heat until the tofu boils, then reduce the heat to low.
- Then, gradually add the mushrooms, onions, and chili peppers into the pot, simmer for about 5 more minutes until the tofu absorbs the seasoning, and the mushrooms are tender and crispy. Season to taste, sprinkle toasted sesame seeds on top, then turn off the heat.
2. Korean Mixed Glass Noodles

Ingredients:
- 300g delicious beef, cut into bite-sized pieces
- 3 cloves minced garlic
- 6 teaspoons sugar
- 3/4 teaspoon black pepper
- 4 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 onion
- 2 carrots, peeled and sliced into bite-sized pieces
- 4 shiitake mushrooms, cleaned and sliced thinly
- 1 small bell pepper
- 1 small bunch of baby bok choy
- 3 stalks of green onions, cut into long segments
- 1 pack of Korean glass noodles
- Cooking oil
- Toasted sesame seeds
Recipe for Korean Mixed Glass Noodles
- Marinate the beef with minced garlic, 1 teaspoon sugar, 1/4 teaspoon black pepper, 1 tablespoon soy sauce, and 1 teaspoon sesame oil, mix well and set aside.
- Bring a pot of water to a boil, cook the glass noodles for about 7 minutes until soft. If the noodles are too long, use scissors to cut. Season the boiling water with 1 tablespoon sesame oil, 1 tablespoon soy sauce, and 2 teaspoons sugar to enhance the flavor of the noodles. Once the noodles are soft, remove and set aside to drain.
- Heat a little oil in a pan over high heat, quickly stir-fry the carrots and onions to retain their crispiness.
- Add the baby bok choy, bell pepper, shiitake mushrooms, and green onions to stir-fry with a little garlic. Cook until the vegetables are just tender, then turn off the heat.
- Add a bit of new oil to the pan, then stir-fry the beef.
- Then mix the glass noodles with the beef. Season the noodles in the bowl with about 3 teaspoons sugar, 1/2 teaspoon black pepper, 2 tablespoons soy sauce, and 1 tablespoon sesame oil along with some toasted sesame seeds. Mix well to let the noodles absorb the flavors.
3. Korean Stir-fried Beef

Ingredients
- 600g pork meat
- 1/2 onion
- 1/3 bunch of green onions
- 1 red chili pepper
- 1 green chili pepper
- 1 tablespoon chili powder
- 15ml sesame oil
- 7ml cooking oil
- 45ml soy sauce
- 1 tablespoon minced garlic
- 30ml plum juice (if available)
- A pinch of black pepper
Sauce Seasoning
- 3 tablespoons chili powder
- 15ml soy sauce
- 15ml rice wine
- 2.5 tablespoons chili sauce
- A bit of minced garlic, ginger
- A pinch of black pepper
How to Make Korean Stir-Fried Pork
- Cut the pork into bite-sized pieces and mix it with the marinating spices.
- Slice the onion, green chili pepper, and red chili pepper. Cut the green onions into sections.
- Put the sauce seasoning into a bowl and mix well.
- Heat some cooking oil in a hot pan, stir-fry the meat until cooked. Then add the mixed seasoning sauce and stir well to let the meat absorb the flavors.
- Add onions, green onions, sliced chili peppers, and a little chili powder, stir until cooked, then turn off the heat.
4. Crispy Pork Floss Rice Rolls

Ingredients for Crispy Pork Floss Rice Rolls
- 2 bowls of rice
- 1 tablespoon rice vinegar
- ½ teaspoon sugar
- 30 grams purple cabbage
- 30 grams of cucumber
- 3 teaspoons mayonnaise
- 2 tablespoons toasted sesame seeds
- 1 tablespoon kimpa seasoning sauce
- Shredded pork floss, seaweed leaves
How to make shredded pork mixed rice
- Cut the cabbage into thin strips, cut the cucumber into long pieces, removing the seeds. Mix the rice with kimbap seasoning sauce.
- Mix the seaweed and sesame seeds with the rice. Then place seaweed leaves on a food wrap, spread the rice evenly with cabbage, cucumber, shredded pork floss, and drizzle with mayonnaise sauce.
- Roll the kimbap tightly by hand to ensure the ingredients stick together. Use a sharp and slightly moistened knife to cut each roll into evenly thick pieces. The final step is to enjoy!
5. Spicy Korean Chicken Feet Stir-fry

Ingredients for Spicy Korean Chicken Feet
- 200g chicken feet
- 2g cloves
- 5g cinnamon
- 1/2 teaspoon soy sauce
- 1/2 tablespoon tomato sauce
- 50g Korean chili paste
- 1 teaspoon sugar
- 1 tablespoon minced garlic
- 1 teaspoon white sesame seeds
Method:
- First, wash the chicken feet thoroughly and cut them into bite-sized pieces.
- Next, put cloves, cinnamon, soy sauce, chicken feet, and 200ml water into a pot and bring to a boil. Then, reduce the heat and simmer the chicken feet for about 10 - 15 minutes before removing and draining them.
- Mix tomato sauce, Korean chili paste, and sugar in a small bowl until well combined.
- Heat a pan with some cooking oil and sauté the minced garlic until fragrant. Then, add the chicken feet and the mixed sauce into the pan, stirring well to let the chicken feet absorb the sauce.
- Toast white sesame seeds with a little cooking oil.
- Arrange the chicken feet on a plate, sprinkle white sesame seeds on top, and you have completed the Korean spicy chicken feet dish!
6. Korean Pancakes (Banh Xeo)

Ingredients
- 100 grams of curly kale
- 100 grams of squid
- 10 pieces of tiger prawns
- 1/4 carrot, diced
- 1/8 onion, diced
- 1 red chili
- 200 grams of Korean pancake mix
- 120ml water
- 3 eggs
- Salt
- 2 tablespoons water
- 2 tablespoons sesame oil
- 1 tablespoon white vinegar
- 1 teaspoon sugar
- 1 small red chili, finely chopped (adjust spiciness to taste)
How to Make Korean Pancakes
- Rinse and chop the curly kale. Peel and devein the shrimp, remove the heads and tails, then cut the shrimp in half.
- Clean the squid and cut it into long strips.
- Heat a pan with 1 teaspoon of oil. Stir-fry the onion until fragrant.
- Sauté the curly kale until tender, add salt to taste, continue to stir briefly, then turn off the heat.
- Prepare a large bowl, combine pancake flour, eggs, and slowly pour in water while stirring to form a smooth batter. Add onions, sautéed kale, carrots, red peppers, shrimp, and squid, then mix well.
- Heat a pan over high heat, add a little oil and ensure it coats the pan evenly. Once the oil is hot, pour the pancake batter into the pan and fry until golden brown, then flip and fry the other side. Repeat until all the batter is used.
- Arrange the pancakes on a plate, cut into pieces. Prepare a small bowl, mix soy sauce, vinegar, water, sugar, and sliced chili peppers together. Enjoy the pancakes with the dipping sauce.
7. Korean Mixed Rice

Ingredients for Korean Mixed Rice
- 1 bowl of cooked rice
- 100g beef
- 1 chicken egg
- Bean sprouts, cucumber, carrot, kale, fresh shiitake mushrooms
- Several cloves of garlic, cooking oil, seasoning, MSG, Korean chili paste
How to Make Korean Mixed Rice
- Clean the fresh shiitake mushrooms, soak them in warm water with a few grains of salt, and then thinly slice them. Wash the bean sprouts and kale.
- Remove the seeds from the cucumber, cut it into 3-4 cm sections, and then julienne. Grate the carrot into slightly thicker strips. Finely chop the garlic.
- Heat a pan with some cooking oil, sauté the chopped garlic until fragrant. Add the beef, season with appropriate spices, and stir-fry until cooked. Remove the beef from the pan and set aside.
- In the same pan used to cook the beef, continue by adding the kale and stir-frying with some seasoning and MSG.
- After stir-frying the vegetables, continue by stir-frying the mushrooms and carrots. At this stage, all the ingredients are cooked separately!
- Soak the bean sprouts and cucumber in water with a few grains of salt.
- Pro tip: It's best to add the bean sprouts to the pot when the water is still cold, and once it starts to boil lightly, immediately remove them to maintain their crispiness!
- Soak the bean sprout and cucumber briefly, then pour them into a colander to drain the water.
- Prepare a clay pot, spread the rice in the pot. Layer the various vegetables and meat around it.
- Crack an egg in the center, then place it on a low flame for about 7-10 minutes, until you hear some crackling sounds and the rice forms a thin crispy layer underneath. Remove from heat and enjoy your Korean mixed rice dish!
