Step 1: Soak the snails in rice water with 2 - 3 sliced chilies for about 2 - 3 hours to remove dirt and mucus, then rinse them thoroughly with water to clean the shells. While washing, add some salt to quickly clean the snail shells. Remember to wash them thoroughly to ensure the quality of the dish. Be careful not to break the snail guts during the washing process, which would affect their freshness and taste.
Step 2: Peel and clean the lemongrass, then wash and crush it, finely chop the chili, and crush the lime (or grapefruit) leaves. Extract coconut water from the coconut.
Step 3: Put the snails into a pot, then add lemongrass, chili, lime (or grapefruit) leaves, coconut milk, and season with sugar, salt, and MSG. Mix well. Adjust the seasoning according to your taste preference.

Step 1: Clean the chicken feet, halve them for easy handling, and boil in water with 2 tablespoons of soup powder. Once the chicken feet are partially cooked, remove and let them cool.
Step 2: Cut the lemongrass into small pieces about 3-5 cm long and finely chop.
Step 3: Place the chicken feet in a food storage bag, add 1 tablespoon of cornstarch, then tightly seal the bag and shake well until the chicken feet are evenly coated with the flour.
Step 4: Next, heat cooking oil in a pan, fry the lemongrass until golden and fragrant, then remove and place on a plate lined with paper towels.
Step 5: Using the same oil used to fry the lemongrass, fry the chicken feet. Be careful while frying as the oil may splatter and cause burns.
