To participate in the Cooking Competition on the occasion of October 20th organized by the Union and Women's Union of Thoi Binh Commune, Thoi Binh Middle School has chosen the theme: 'THE WOMAN I LOVE.' The reasons are as follows: Firstly, today marks the establishment of the Vietnam Women's Union on October 20th, a day for all of us to recognize and express gratitude for the silent contributions of women to society, praising and honoring the beauties that women have bestowed upon humanity. Secondly, all the selected dishes presented by our school not only have nutritional value but also contribute to describing the traditional moral qualities of Vietnamese women that have been preserved and promoted in modern times.
Regarding the menu, our competition dishes consist of 3 main items. With creatively named dishes, these three are all prepared from familiar ingredients of the Mekong Delta region. Specifically as follows:
Ä The first dish named COLORFUL BEAUTY: featuring tofu stuffed with fried meat and tomato sauce, served with lettuce dipped in soy sauce. It's called 'Colorful Beauty' because it has three distinct and uniquely meaningful colors:
- Red (from tomatoes) symbolizes deep, intense affection, the unwavering loyalty of women to their families, husbands, and children, constant and unchanging.
- Deep brown (from fried tofu) represents diligence, endurance, sacrificial qualities, enduring hardships and difficulties, enduring all challenges to ensure the family's well-being.
- Green (from lettuce) symbolizes enduring life, resilience, eternal optimism, and the will to rise, never giving in or surrendering to fate. These are the timeless virtues of Vietnamese women.
The second dish is called SEA GRACE: It's a dish of braised basa fish with coconut milk, served with ripe mango. 'Sea grace' means 'fish lying in the water.' The image of 'Fish' symbolizes women. The term 'in the water' represents the environment, the circumstances in which that woman lives. In any era, women always need a living environment, favorable conditions for women to express their beauty, talents, and precious ethical qualities. Today, our Party and State continue to focus on environmental factors, advocating for the construction of a just and gender-equal society, providing better conditions for women to participate in social activities, creating opportunities for women to assert their position.
The third dish is HIDDEN JEWELS OF HUYNH HOA: It's a soup made with cabbage leaves wrapped around minced meat, simmered with turnips, carrots, and jicama... creating a delicious and nutritious dish. The minced meat rolled in cabbage leaves is like a precious gem hidden in a flower. The flower branch represents women, and the gem here refers to the beautiful ethical qualities. Every Vietnamese woman has these gems, which are excellent traditional virtues passed down through generations: gentleness, loyalty, sacrificial endurance, benevolence, and friendship, etc. Our duty is to create conditions for women to preserve, manifest, and promote these valuable ethical values, contributing to building a more just and beautiful society.
With a menu consisting of the 3 main dishes mentioned above, eaten with rice, interspersed with medicinal wine and a dessert of watermelon, we hope to make the diners enjoy and be satisfied. The nutritional components of the above-mentioned dishes, in our opinion, meet the requirements at a reasonable level, suitable for the cost set by the Organizing Committee. Essential nutrients, vitamins, and minerals for the body are fully provided, for example:
- Protein: found in rice, pork, basa fish, tofu...
- Lipids (fats): found in basa fish, cooking oil...
- Various Vitamins: found in tomatoes, cabbage, carrots, raw vegetables, ripe mango...

The traditional image of the diligent homemaker is a radiant beauty in the noble tradition of Vietnamese women. With that in mind, for today's culinary competition, our team participated in cooking the following dishes:

Taking a holistic view of our five culinary creations, from the traditional favorites of chickens, pigs, and locally grown vegetables, roots, and fruits from the beautiful and beloved land, to the tender white meat, fragrant and sweet taste of graceful and charming fish in the cool depths between the two shores. It can be said that our dishes have distilled the essence of the earth, sky, and water.
From a medical perspective, the nutritional value and healing properties of the 5 dishes above are exceptional. The sausage paired with pickled vegetables provides the body with a large amount of nutrients, especially the sour taste of pickled vegetables making the meal enjoyable and aiding digestion. Roast chicken provides an ideal protein level, often recommended by doctors as a replenishing supplement during recovery periods, enhancing immunity and vitality. Crispy fried fish, golden like honey, crunchy, and fragrant, without the chilly sensation, embraces the essence of the vast rivers, creating a delightful experience in the autumn space. Next is the bread curry, a composite dish of protein, fat, fiber, starch, etc., commonly used as a daily main course in Western diets. Perhaps this culinary habit contributes to the robust stature of the people on the other side of the globe. Concluding our menu is Su-su Sticky Rice Dessert, the dessert like no other, as the saying goes, 'Eat sticky rice, and the work is done.'
And finally, through the lens of culinary culture, we dare to name our dishes as follows:

This dish, particularly charming in those first chopstick encounters, makes the diners both enjoy the flavors and engage in refined conversation. Thus, we call it 'Spring Grass and Flowers.'
Next are the crispy fried fish, with spread fins and erected scales, vibrant and beautiful, as if performing martial arts, challenging guests to enter a 'new battle' to overcome obstacles and breakthrough in the acceleration phase. We name it 'Sweet Provocation.'
Following is the serene paradise, the label for roast chicken, as this dish brings robust health, enhances intelligence, and ignites the springtime 'bringing people closer together.'

The curry bread is a daily staple for Europeans, known for its weight-gaining and energy-boosting properties. It becomes a symbol of resilience on the battlefield of life, aiding you to endure challenges like a steadfast soldier, earning the nickname 'Heartwarming Warrior' when 'pouring concrete' with this dish, saving you from the worry of 'breaking the half-way burden.'
Lastly, the Su Si sticky rice completes a joyful, youthful culinary cycle. Everyone is satisfied, their bellies warm, faces bright with joy, eyes deep in admiration, and laughter echoing, soaking in the profound sentiments of the lyrics by musician Nguyen Ngoc Thien. Respected Judges! Family meals form the foundation for creating familial happiness, showcasing the roles of daughters-in-law, wives, and mothers in the family. Today, our Women's Union from An Ngai Hamlet presents the 'Weekend Cuisine' competition menu consisting of 6 dishes with the theme: 'REUNION'
I. Appetizer: Steamed patterned eggs:
Here is the first appetizer in the menu, using simple, familiar ingredients like duck eggs, sausage, shiitake mushrooms, and wood ear fungus. It won't be too difficult to prepare this visually appealing and highly nutritious dish suitable for all ages.
II. The next dish after the appetizer includes:
1. Assorted soup:
Comprising various synthesized ingredients such as meat, seafood, eggs, mushrooms, etc., rich in protein and minerals. This delicious dish aids digestion, regulates heart function, and can have a calming effect.
2. Shrimp immersed in coconut water:
As we all know, our country has many shrimp varieties in lakes, ponds, rivers, and seas, making them readily available. Shrimp are economically and nutritionally valuable, especially in calcium, promoting bone development. All shrimp varieties are good food, providing a considerable amount of protein in daily meals.
3. Fake elephant trunk pork stomach:
This dish is a combination of ingredients such as pork stomach, sausage, and additional materials for shaping. It has a rustic feel close to nature and high nutritional value suitable for all ages.
4. Steamed fish:
Fish is present in every meal. Experts recommend eating fish regularly, with carp being a type of seafood not only nutritionally valuable but also effective in treating various diseases, such as kidney and unstable pregnancy, chronic kidney inflammation, and cervical cirrhosis.
III. Satisfying dish: Yangzhou Fried Rice
This rice dish is made from long-grain brown rice with the right amount of water to prevent dryness or breakage. The cooled rice is stir-fried in lard and can be combined with various vegetables, tubers, sausages, and various seafood. This dish is not only rich in carbohydrates but also provides the body with plenty of protein. It serves as a main dish to satisfy hunger during meals.

The 'Aspiration for Ascendance,' a boat of prosperity, elegantly blends the loyal purple of orchids with the vibrant red of roses, the youthful yellow of marigolds, alongside small white flowers. All emerging above the green foliage of the internal meadow, creating a reservoir of human emotions, patriotism. It costs only 50,000 VND for a fresh bouquet that will grace the family table for 7 days, fostering warmth and allure.

Maintaining a normal lifestyle for a healthy body is our aspiration. The convergence of various factors, including nutritional elements in every meal, is crucial.
To ensure nutrition for a family meal of 5, we introduce a spread of 5 dishes: Crispy fried fish; Stir-fried beef with cilantro; Fried eggs - lean meat; Pork belly - Mung bean mold and countryside crab soup. The cost is approximately 100,000 VND, concluding with fresh tangerines and green tea.
We selected these dishes for their respective benefits, recognizing that nutrient absorption requires moderation. Therefore, each meal should encompass a variety of elements: Fiber, green vegetables, tubers, fruits, and fats, evident in the presented menu.
By maintaining regular meals, incorporating fresh, delicious ingredients, and skillful preparation with suitable spices, we can create truly enticing dishes that evoke a delightful taste. This enhances physical well-being and energy levels.
