The crispy outer layer, infused with the fragrant aroma of lemongrass and a hint of savory saltiness, is irresistible. Meanwhile, the inside is tender and bursting with flavor.
Ingredients for Crispy Salted Chicken Feet:
- 500g of chicken feet
- 5 stalks of lemongrass
- Lime leaves
- Cornstarch
- Salt powder (*)
- Seasonings: salt, cooking oil

How to make crispy salted chicken feet:
Step 1:
Wash the chicken feet thoroughly, halve them for easier consumption, then boil them in a pot. Add a pinch of salt to make the chicken feet more flavorful and tender.
When the chicken feet are cooked (boil for about 2 minutes), remove them from the pot and let them cool.
Step 2: Put the cooled chicken feet into a plastic bag, add 1 tablespoon of cornstarch, then tightly seal the bag and shake well to coat the chicken feet evenly with the starch.
Step 3: Clean the lemongrass stalks, cut them into 3cm segments, finely chop them, and rinse the kaffir lime leaves, then slice them thinly.
Step 4: Heat a pan, add oil, then fry the lemongrass until golden brown, remove and drain excess oil. Next, coat the chicken feet with cornstarch and fry them in the pan.
(Note: this frying step may cause oil splatter, so be sure to have a splatter guard ready for safety)
Fry until the chicken feet are evenly golden brown, then remove and drain off excess oil.
Now, mix the salt powder with the lightly fried lemongrass, add thinly sliced kaffir lime leaves, and place the chicken feet together in a large covered bowl.
Shake well until the salt powder coats the surface of the chicken feet evenly. Now, plate them up and enjoy!
