- 1 whole duck
- 300g bamboo shoots (stems and leaves)
- 1 piece of ginger
- 3 shallots
- Scallions, lemon grass, chili
- Fish sauce, black pepper, MSG, broth mix, satay sauce, white wine
- Noodles for serving (optional)
How to cook duck with bamboo shoots
Step 1: Prepare the Ingredients
- Clean and peel the ginger. Divide it into 2 parts. Crush one half for washing the duck, finely chop the other half for cooking.

- Remove the duck feathers and wash it with some salt, finely crushed ginger, and white wine to eliminate any odor.

- Remove the tough part of the bamboo shoot, then wash and cut it into small strips or slices. Rinse again with water and drain. It is recommended to blanch the bamboo shoots for 20-30 minutes before cooking to remove bitterness and toxins.
- Clean the chili peppers, slice them.
- Clean and finely chop scallions, coriander leaves, and mint leaves.
- Peel and finely chop shallots.
Step 2:

- Cut the duck into bite-sized pieces and marinate with spices including: 1 teaspoon of black pepper, 1 teaspoon of fish sauce, minced ginger, ½ teaspoon of MSG, 1 teaspoon of broth mix. Then, mix the duck and spices evenly, marinate for about 15 minutes for the ingredients to absorb.
Step 3:
- Saute half of the shallots in a pan until fragrant, add the bamboo shoots and stir-fry, then add 1-2 teaspoons of fish sauce, stir well.
- Place a pot on the stove, saute the remaining shallots until fragrant, then add the duck meat and stir well, season with 2 teaspoons of satay sauce until the duck is firm again. Pour 1 bowl of water into the pot, when the water boils, reduce the heat.

- Add the bamboo shoots to the pot, cook for another 5-7 minutes, season to taste, then add scallions, coriander leaves, and chili to the pot, stir well and turn off the heat.
- Duck and bamboo shoot stir-fry can be served with rice. However, it will be even more delicious when served with vermicelli noodles.
