Step 1: When buying pork trotters, they should be blanched first. This step plays a crucial role as it makes the dish crispy, tender, and odor-free. To blanch the pork trotters, you can use rice husks, sugarcane residue, or newspaper; the skin will become crispy (avoid blanching on a gas stove). The pork trotters need to be blanched until golden brown.

Step 2: The accompanying ingredient is jicama, cut into pieces using the thumb and then thoroughly boiled with water and a pinch of salt at least 3 times before processing.

Step 3: After burning, the pork trotters will be cleaned, meat separated, and then chopped into bite-sized pieces.
