Just a slight tweak with two ingredients, vermicelli and eggs, the seemingly familiar and mundane kimbap dish turns into a delectable and enticing treat.
Kimbap is a Korean rice roll dish, filled with a variety of ingredients such as eggs, ham, shrimp, vegetables... wrapped in a layer of sticky rice and a nutritious thin layer of seaweed. Nowadays, as Korean cuisine is gradually gaining popularity among Vietnamese people, rice rolls are becoming more common and somewhat repetitive. However, with the vermicelli egg Kimbap version, this dish becomes fresh, flavorful, and extremely attractive!
Ingredients for making vermicelli Kimbap rolls:
(Serving 3 – 4 people)
- Dried seaweed: 4 sheets
- Eggs: 4 pieces
- Vermicelli: 80g
- Carrot: ¼ piece
- Leafy greens: 50g
- Onion: ¼ piece
- Green and red bell peppers: each ½ piece
- Sesame oil: 2 tablespoons
- Salt: 1 teaspoon
- Sugar: 1 teaspoon
- Sesame oil: 1 teaspoon
- Mayonnaise sauce: 50g (approximately 3 tablespoons)
- Korean chili paste: 1 tablespoon
- Toasted sesame seeds

How to make vermicelli kimbap rolls:
Step 1:
- Peel and wash carrots, then julienne.
- Peel onions, chop finely. Wash bell peppers, slice into strips.
- Wash and cut leafy greens into pieces.
- Mix mayonnaise sauce with Korean chili paste.
- Soak vermicelli in warm water for 10 minutes, rinse with cold water to remove dirt, then drain.

Step 2:
- Place carrots, bell peppers, and leafy greens in a pot, blanch briefly, then remove and drain.
- Crack eggs into a bowl, stir well with a pinch of salt. Divide the eggs into 4 portions and fry each portion in a hot pan until the eggs are cooked and golden on both sides, then remove and drain excess oil. Remember to handle gently to prevent the eggs from breaking.
- Transfer onions to the pan, stir-fry for about 2-3 minutes until fragrant, then add carrots, bell peppers, leafy greens, and vermicelli, stir-fry until cooked. Add salt, sesame oil, sesame oil, and sugar, mix well for about 3 minutes, then turn off the heat. Adjust seasoning to taste.

Step 3:
- Place the egg on a specialized bamboo mat, followed by seaweed, vermicelli, and stir-fried vegetables, then roll tightly by hand.
- Use a sharp knife to cut vermicelli into even pieces, place on a plate, and sprinkle some toasted sesame seeds on top for visual appeal.

Vermicelli kimbap is just as delicious as rice kimbap. The flavorful stir-fried vermicelli with fresh and crisp vegetables, seaweed wrap, and fragrant golden scrambled eggs not only tantalizes the taste buds but also offers a light and nutritious option, perfect for a simple breakfast or a light meal. With just a little skill, you can create a special vermicelli kimbap dish. Wishing you success and bon appétit!
