- Tenderized goat meat: 400g
- Sweet condiment: 50g
- Fresh limes: 2 pieces
- Dried shallots: 1 bulb
- Garlic: 1 bulb
- Lemongrass: 2 stalks
- Coriander seeds: 10g
- Ginger: 1 branch
- Mature galangal: 1 bulb
- Horn chili: 2 pieces
- Water spinach: 1 bunch
- Lemongrass: 1 bunch
- Lime leaves: 4 – 5 leaves
- Pineapple: 1 piece
- Green banana: 1 piece
- Pickled star fruit: 2 pieces
- Toasted sesame seeds: 20g
- Coriander seeds: 10g
- Seasonings: salt, pepper, seasoning powder, sugar
Steps to Prepare Lemon-Infused Goat Tartare:
Finely chop peeled onions and garlic

Cleanse and cut galangal and lemongrass into small pieces, then wrap in a thin cloth, squeeze to extract essence
Rinse and slice the chili peppers
Peel and thinly slice the pineapple, removing the eyes to create fan-shaped slices

Clean and slice the pickled star fruit horizontally
Cut the lime in half and extract the juice

Clean the green banana, remove the outer skin, cut both ends, slice thinly, and soak in a bowl of diluted saltwater to prevent discoloration
Roast and grind fragrant coriander seeds until finely crushed
Toast sesame seeds and crush them into a paste
Clean lime leaves, basil, and ginger, then julienne them

Clean the goat meat, cut it into thin slices, and marinate with pepper, salt, dried shallots, finely chopped garlic, and a touch of sweet soy sauce.
