Ingredients for Smoky Fire Tofu:
(Serves 4 people)
- Tofu (bean curd): 300g
- Meaty crab: 300g
- Carrot: 1 piece
- Shiitake mushrooms or your preferred type: 100g
- Dried garlic: 1 bulb
- Seasonings: salt, sugar, pepper, crispy fried flour, cornstarch
- Cooking oil, sesame oil
Note:
- Choose young, tender beans for the best taste.
- If you don't have crab meat, you can use shrimp, squid,... as a substitute.
How to Make Smoky Fire Tofu
Step 1: Prepare the Tofu
- Rinse the tofu thoroughly with cold water, cut it into neat squares, suitable for eating.
- Roll the tofu in crispy frying flour, then fry briefly and remove to drain excess oil.

Choose young, tender, smooth tofu
Step 2: Prepare the crab meat
- Boil the crab meat (no need for large ones), remove the meat.
- Dip the crab meat in a mixture of alcohol and ginger, then lightly pound to enhance the aroma and remove the fishy smell. Sprinkle with a little pepper, mix well.
- If you don't have crab, you can substitute with shrimp, squid, octopus, and follow the same steps as above

Step 3: Make the sauce
- Place a pan on the stove, add some cooking oil and sauté the garlic until fragrant.
- Add broth (you can choose ready-made type), season with oyster sauce, sesame oil, bouillon powder, salt in the ratio of 2:1:1/2:1/3 teaspoon. Keep the heat low, finally sprinkle some cornstarch into the mixture to thicken the broth.

Step 4: Proceed
- Carrots, mushrooms,... wash thoroughly, cut into bite-sized pieces.
- Spread aluminum foil, layer bottom with vegetables, followed by tofu layer, and finally cover with another layer of vegetables on top.
- Sprinkle crab meat on top and drizzle with freshly made sauce.
- Now simply fold edges of aluminum foil carefully, place in oven for 10 minutes, then take out and enjoy.
