- Pork ribs: 300 gr
- Ground beef: 150 gr
- Tomatoes: 2 pieces
- Pork fat: 100 gr
- Betel leaves, star anise, shallots, spring onions, cilantro
- Red rice noodles
- Fresh greens for serving
How to Make Hải Phòng-style Crab Noodles
Step 1: Clean the crabs thoroughly, remove the apron, and peel off the shell.

Step 2: Crush the crab claws to extract the crab water. Use a toothpick to carefully remove the crab roe into a small bowl and set aside.

Step 3: Clean the pork ribs with a pinch of salt, then parboil briefly in a pot.
Then, rinse again thoroughly before simmering to make the broth.

Step 4: Grind the crab meat to extract the crab juice, season with some spices and a bit of shrimp paste to enhance the flavor. Stir while simmering to evenly distribute the crab roe. Then, scoop out the crab roe into a separate bowl and pour the crab broth into the pork broth. Bring to a boil again, then ladle the crab roe back into the broth!
