Step 1: Prepare the dough and mung beans for a flavorful green bean Bánh Dày Begin by soaking the mung beans overnight. Mix glutinous rice flour, rice flour, and a pinch of salt. Gradually add orange juice and water, kneading until the dough is smooth and non-sticky. Step 2: Prepare the filling Steam the mung beans until tender and mash them. Divide into three parts: one for sweet filling (mix mung beans with cooking oil and sugar), and one for scallion filling (mix sautéed green onions with mung beans, season with sugar and salt).

Step 3: Molding the dough Utilize banana leaves or aluminum foil, cut into small squares fitting the size of the green bean-filled Bánh Dày. Lightly oil to prevent sticking. Add a bit of fresh milk to the previously rested dough, and knead again briefly. Divide the dough in two, one for the sweet bean filling and the other for the scallion bean filling. Form the dough into balls, lightly oil your hands if necessary, flatten each ball, place the filling in the center, and encase it tightly, similar to making Bánh Trôi. Make a slight indentation in the center before placing it on the prepared banana leaf.
