Making flan is not difficult, but it requires careful attention. Without it, achieving that characteristic soft, smooth texture becomes elusive. Follow the recipe below for a delightful, aromatic treat.
Flan is a delicious summer dessert, and its preparation is quite simple. However, many encounter issues like a bumpy or stiff texture. With the simple flan-making method below, you'll avoid such situations and enjoy a smooth, fragrant treat.
Flan Making Process
Ingredients Needed for Flan Making
- Unsweetened fresh milk: 360ml;
- Eggs: 2 pieces;
- Egg yolks: 1 piece;
- Condensed milk: 1 tablespoon (as used in pho);
- Sugar: 50g;
- Vanilla: 1 tablespoon;
- Rum: 1 teaspoon (if available);
Ingredients for Caramel Part
- Brown or white sugar: 120g;
- Cold water: 50ml.
Steps to Make Flan:
Step 1: Dissolve sugar and cold water in a pot. Place the pot on low heat until the sugar turns slightly dark yellow, then turn off the heat. Pour the mixture into a dish or container of your choice.

Step 2: Mix fresh milk, sugar, and condensed milk in a pot and dissolve. Place on low heat until the sugar is dissolved. Turn off the heat, add vanilla and rum, and mix well. Ensure the milk is not too hot and never let it boil.

With this simple flan-making method, you can also add rum
Step 3: Crack all eggs into a bowl and beat lightly (be careful not to overbeat). Then pour the slightly warm milk into the eggs while stirring in one direction. Strain this mixture through a sieve. Finally, pour the strained mixture into the caramel-filled dishes. If the dishes have no lids, cover them with aluminum foil. Arrange the dishes in a tray. Pour hot water into the tray, filling it 1/3 full.

Step 4: Preheat the oven to 145°C. Place the baking tray on the lowest rack of the oven and bake for 35-40 minutes until the flan is set. When removing the flan, it may still jiggle slightly; simply refrigerate for 2-3 hours until set. This flan-making method yields a beautiful color.
If you don't have an oven, you can steam the flan using the water bath method. Prepare a double boiler, bring water to a boil, then place the cakes in the steamer. Cover with a cloth under the lid to prevent water from dripping onto the cakes. Steam for about 20 to 30 minutes depending on the size of the cakes. A toothpick inserted should come out clean when the cakes are done. Remove from heat and let cool before refrigerating.
Important notes for making flan
Avoid steaming the flan for too long as it may cause it to become porous. Do not overheat the sugar as it will make the caramel bitter and grainy. To achieve the golden color as shown, use 2 eggs and 1 egg yolk.
Wishing you success with making flan.
