Ingredients
- 500g beef bones
- 500g fresh vermicelli
- 1 pork heart
- 2 pork livers (about 100g)
- 300g pork stomach
- 300g pork intestines
- 1 onion
- 5 dried onions
- 3 spring onions
- A bit of spring onions and cilantro
- 4 lemongrass stalks
- Seasonings: Cooking oil, soup powder, salt, MSG, rock sugar
Execution Steps
Step 1: Ingredient Preparation
Firstly, lightly scrub the beef bones to remove any dirt on the surface, then wash them thoroughly with water. For the pork heart, liver, stomach, and intestines, rinse them with salt and vinegar for the cleanest possible ingredients.

Peel the skin off the onions and leave them whole. Wash the spring onions and cilantro, then cut them into approximately 0.5cm pieces to sprinkle on top of the bún bowl later.
Step 2: Cooking Process
Begin by simmering the beef bones to extract the broth for the soup. Place the beef bones, onions, 2 teaspoons of salt, 1 tablespoon of rock sugar, and approximately 3 liters of water in a pot. Bring it to a boil. Once boiling, add 4 lemongrass stalks and reduce the heat to the lowest setting, letting it simmer for about 1 hour.
While waiting for the bone broth to simmer, place the pork heart, liver, stomach, and intestines, along with 1.5 teaspoons of salt, 1/3 tablespoon of MSG, and 5 dried onions in another pot to cook.

Once the broth for the pork heart, liver, stomach, and intestines is boiling, use a ladle to skim off any floating impurities, then turn the heat down and continue simmering. The respective cooking times from the boiling point are as follows: Stomach: 7 minutes; Intestines: 10 minutes; Heart and liver: 18 minutes.
After removing the intestines and stomach, immerse them in a basin of cold water for about 3 minutes to maintain their white color.

After simmering the bones for 1 hour, add 1 tablespoon of rock sugar, 1.5 tablespoons of seasoning granules, and 1/2 teaspoon of salt to the pot. Stir well to dissolve the seasonings and continue simmering until the broth boils again, then turn off the heat. Finally, slice the heart and liver into thin, bite-sized pieces, and cut the intestine into 1-1.5 cm segments.
Once done, place the rice vermicelli in a bowl, arrange the heart, liver, intestine, and fresh herbs on top, then pour in the simmered bone broth to complete the bowl of hearty rice vermicelli soup.
3. Finished Dish
