How to make grilled chicken skewers:
Step 1:
- Chop and clean onions and garlic thoroughly.
- Clean lemongrass, remove outer layer, and finely chop. Rinse and finely slice the chili.
- Clean and drain assorted greens. Wash and cut cucumber into slices.
- Season the chicken thighs with 1 tablespoon coarse salt, rinse with cold water, repeat the salt massage, and rinse. Boil a pot of water, briefly immerse chicken thighs to remove any lingering odor, then cut into bite-sized pieces.

- For an oven, preheat to 200 – 230 degrees Celsius, grill for about 10 minutes, then place the chicken skewers and grill for an additional 15 minutes. Remove, brush a layer of cooking oil on top of the chicken, flip, and grill the other side for 15 minutes.
