Creating the dumpling filling
Slice lean pork and wood ear mushrooms finely, marinate with pepper, salt, finely chopped scallions, and fish sauce. Remove shrimp heads, tails, and veins. Cut half of the dried shallots into thin rings, finely chop the other half.
Sauté the finely chopped shallots until fragrant, stir-fry the minced meat and wood ear mushrooms until cooked, then add shrimp and stir-fry over high heat until the shrimp turns a reddish-pink color, then turn off the heat.

Preparing the dumpling filling
Making the dough
Mix 200g tapioca flour + 50g arrowroot starch and ½ tablespoon of salt evenly. Gradually add about 250ml of hot boiling water (above 100 degrees), stir thoroughly. Wait until well mixed, then add the remaining tapioca flour, mix thoroughly. When the dough cools down a bit, knead it thoroughly by hand.

Roll out each dough ball very thinly, place the filling (1 shrimp + a small amount of minced meat and wood ear mushrooms) in the center of the dough sheet, fold the edges together, and press the edges with fingers to seal, similar to making dumplings or dim sum.
Place a pot of water for boiling the dumplings on the stove, add ½ tablespoon of salt, 1 tablespoon of cooking oil, and heat over medium heat. When the water boils, place the dumplings in the pot, wait for them to float to the surface, then remove and place them in a bowl of cold water.

The thinner the rolled-out dough, the more translucent and shimmering the dumplings, gleaming under the sunlight. However, meticulous care is necessary to ensure the dumplings maintain the chewy texture of the dough without cracking or breaking – a skillful art that demands the maker's practiced hands, where 'a hundred attempts may not equal the skill of a familiar hand.'
