Making homemade bologna
Everyone can easily make homemade bologna using a smoothie blender for the whole family to enjoy. It's both simple and safe, with no worries about welding or chemicals.
Ingredients as follows:
- 500g pre-ground pork, make sure to use a mix of fatty and lean meat. Using only lean meat can result in dry and less flavorful bologna.
– 300g tapioca flour or cornstarch.
– Seasonings: fish sauce, seasoning powder, sugar, white pepper (prevents bologna from turning dark and adds aroma).
– 50ml cold water.
– 15g baking powder.
Instructions for making Vietnamese bologna:
– Place the ground pork in the freezer. After 45 minutes, take it out and add cornstarch, baking powder, sugar, seasoning powder, white pepper, and fish sauce.

– Put everything in the blender, blend for 15 seconds, then pause.

Put the meat in the blender along with the seasonings
– Add a little cold water and blend for another 10 seconds, repeat until the pork turns pinkish-white, reaching the desired tenderness and stickiness.
Pour in cold water and continue blending until it reaches a certain stickiness and tenderness
– Use 3 large banana leaves, place the bologna in the center. To prevent sticking, wet your hands with a little cold water. You can also use a plastic wrap instead of banana leaves.

Place the raw bologna onto the banana leaves for wrapping
– Fold the edges of the banana leaves, similar to wrapping a cylindrical rice cake.
– Fold one end of the bologna and stand it up. Then, trim the excess leaves if there is too much.

Wrap the bologna step by step as follows
– Use your hands to press the bologna tightly, then fold it, do the same with the remaining part, and tie it vertically with a string.
– Let the bologna lie horizontally, roll it round a few times, then use a string to tie it horizontally.
Place the bologna in boiling water for 30 – 45 minutes, then remove and let it drain.
– Finally, steam the bologna for 30 – 45 minutes, then remove and let it drain.
