How to make Chinese sausage:
Step 1: Clean the pork shoulder with salt water, drain, and then cut into small pieces. Cut the pork fat into small pieces as well and mix with the pork shoulder. Add the spices: salt, soy sauce, Mai Quế Lộ liquor, seasoning, and sugar. Marinate for about 3 hours to let the meat absorb the flavors. Occasionally stir the mixture to ensure the spices penetrate the meat.

Step 2: Clean the pig's caul fat, turn it inside out, and rub salt on it. Rinse thoroughly under running water and drain.

Step 3: Use a Lavie bottle mouth as a funnel, cut off the top of the bottle, insert the end of the caul fat into the bottle mouth, and twist tightly with the pierced bottle cap. This makes it easier to stuff the meat and fat into the caul fat.


Step 4: Stuff the meat-fat mixture into the caul fat, about 10cm each time, then tie each section tightly with a string and continue stuffing until finished. Insert skewers into the Chinese sausages to allow air and water to escape.

Step 5: Boil a pot of water, add some white wine, turn off the heat, and blanch the Chinese sausages in the pot. Then hang the Chinese sausages to dry in a well-ventilated area, preferably under the sun. Once dried, usually takes about 3-5 days depending on the amount of sunlight and desired dryness.

Step 6: To store the Chinese sausages, you can place them in a box, keep them in the refrigerator, and consume them gradually over 2-3 weeks.

Step 7: When ready to eat, you can grill or fry the Chinese sausages. For grilling, you can use charcoal or an oven.
