On weekends, my spouse and I often take our two little ones out to eat, unwinding after a week of hard work. With the motto of 'eating through Hanoi,' we frequently change restaurant locations rather than sticking to one. However, last weekend, when we stopped by Món Ngon Sài Thành restaurant, we decided to make it our go-to spot. The extensive, liberal menu at Món Ngon Sài Thành truly drew us and our family in, embodying the spirit of Southern Vietnamese cuisine. Especially the Trang Bang rice paper rolls with delicious pork, our kids couldn't get enough of it. When we got home, the kids kept pestering me to make this dish. Wanting to please them, I searched for the recipe and was surprised to find that it was simple yet incredibly tasty. Sisters, take note!

Ingredients for making Trang Bang rice paper:
(Serving 4 people)
- Pork: 400g
- Coconut water: 300ml
- Dew-dried rice paper: 1 pack
- Carrot: 1 piece
- Turnip: 1 piece (if available)
- Cucumber: 2 pieces
- Shallots: 2 pieces, garlic: 1 piece
- Lime: 1 piece, bird's eye chili: 2 pieces
- Accompanying greens: perilla leaves, basil, Vietnamese balm, fish mint…
- Seasonings: salt, sugar, good fish sauce
How to make Trang Bang rice paper:
Step 1:
- Peel and wash carrots and turnips, then julienne. Place them in a large bowl, add 2 teaspoons of sugar, gently toss to coat evenly, and let sit for 10 minutes to pickle.
- Soak cucumbers in salted water for 15 minutes, then rinse with clean water and chop finely.
- Peel and crush garlic, separating into two different bowls. Rinse and finely chop chili peppers.
- Wash and drain assorted greens. Cut rice paper into 4 portions.

Step 2:
- Soak pork in salted water for 15 minutes, then rinse with cold water.
- Boil pork with coconut water and finely chopped shallots for about 25 minutes, adding 1 teaspoon of salt. Once cooked, remove from heat, let cool slightly, then slice thinly.

Step 3:
- Prepare the sweet and sour dipping sauce: Mix half a bowl of pork broth with 3 tablespoons of fish sauce, 1 teaspoon of sugar, lime juice, and chopped chili peppers in a bowl. Season to taste.
- Arrange sliced pork, pickled vegetables, cucumbers, and assorted greens on a plate. When eating, wrap rice paper with pork and vegetables, dip in sweet and sour fish sauce. This dish is incredibly flavorful and perfect for casual dining.

Note:
- Consider using pork leg or shoulder as they offer a balanced ratio of meat and fat, providing just the right level of richness.
- Using high-quality dew-dried rice paper will significantly elevate the taste of your dish.
- You can add fresh vermicelli to the filling if desired.
