Wash the beef thoroughly, trim off the fat, and boil with a pinch of salt and seasoning. Add cinnamon, star anise, ginger, and lemongrass to the pot. Once the beef is just cooked, plunge it into cold water (preferably ice water) to firm up. After a while, remove and let it drain.

Boil the beef until just done
Put the pot on the stove, add prepared fish sauce, sugar, vinegar, and a bit of water, then simmer gently. Stir continuously to dissolve the sugar. Turn off the heat and let the mixture cool.
Place the whole pieces of beef in a clean glass jar, add halved or sliced garlic and chili, then pour the prepared mixture of fish sauce, vinegar, and sugar over it. Make sure the beef is completely submerged in the liquid, then seal the jar tightly.
