Sui Cao is a traditional Chinese dish. In the past, people in this country often enjoyed Sui Cao on Tet holiday, especially on New Year's Eve. They believe that this dish symbolizes luck and family reunion. Featuring thin and slightly chewy wrappers filled with either meat or shrimp, Sui Cao can be prepared in two typical methods: steaming and frying. Additionally, there are various fillings for Sui Cao, including shrimp, meat, or vegetarian options.
Ingredients for meat-filled Sui Cao
- Young mustard greens: 4-5 leaves
- Ground lean meat: 300g
- Dumpling wrappers: 30 pieces (readily available in supermarkets)
- Salt, soy sauce, sesame oil
- Spring onions, cilantro, ginger
- Eggs: 2 pieces

How to make meat-filled dumplings:
Step 1:
- Soak mustard greens in a diluted saltwater solution for 15 minutes. Then, rinse thoroughly and let drain.
- Slice the mustard greens and squeeze out excess water. Set aside in a bowl.

- Clean and finely chop spring onions and cilantro.
- Peel and finely mince the ginger.
Step 2:
- Mix ground lean meat, sliced mustard greens, chopped spring onions, cilantro, ginger, along with 3 tablespoons of soy sauce, 2 tablespoons of sesame oil. Add 2 beaten eggs to the bowl.
- Prepare a small bowl of clean water.
- Place a dumpling wrapper on a flat surface, spoon a tablespoon of filling in the center (ensure the filling matches the wrapper size, as excessive filling may cause breakage when steamed). Moisten the edges of the wrapper, fold it in half, and seal the edges tightly. Then, pull and pinch the two corners on either side to create pleats and finish.

- Once the water is boiling, steam for approximately 5-10 minutes until the dumplings are cooked. When cooked, the wrappers will have a clearer appearance.
- Alternatively, you can use the boiling method. Bring a pot of boiling water, add the dumplings. When they float to the surface, they are ready. Scoop them into a bowl of cold water to enhance the wrapper's chewiness.
