- Fresh octopus 1kg
- 2 tomatoes, 2 onions
- 1 green bell pepper, 1 red bell pepper
- Half a pineapple
- A small bunch of celery
- 4 lemongrass stalks, 1 ginger root
- 1 clove of garlic
- Seasonings: Sugar, broth seasoning, MSG, salt, pepper, ketchup, fish sauce...

How to cook Sweet and Sour Octopus
Step 1: Prepare the ingredients for sautéing the octopus
- Fresh octopus, upon bringing it home, rub with white salt and a splash of white wine. Squeeze thoroughly to remove all sliminess and eliminate the fishy smell. Alternatively, rub with salt and lime juice for cleaning. After squeezing, rinse multiple times with water and let it drain.
- After cleaning the octopus, cut it into small bite-sized pieces and place them in a separate bowl.
- Wash the green and red bell peppers, then cut them lengthwise, remove the seeds, and dice them into small square pieces.
- Peel the skin off the onions, remove the core, and cut them lengthwise into wedge shapes resembling citrus segments.
- Remove the core from the pineapple, then cut it into small pieces.
- Trim the roots off the celery, wash thoroughly, and cut it into sections.
- Clean lemongrass, garlic, and ginger. Pound and finely chop them.

Step 2: Marinate the octopus meat
- After draining the octopus, marinate it with broth seasoning, sugar, fish sauce, soup powder, and ginger. Mix well by hand and marinate for 20 - 30 minutes to let the octopus absorb the flavors.

- Heat the pan with 2 tablespoons of cooking oil, add finely chopped lemongrass, garlic, and sauté until fragrant. Then add green and red bell peppers, pineapple, and celery, sauté with a bit of fish sauce, broth seasoning, and MSG. Next, add celery and sauté for about 3 - 5 minutes. Adjust the seasoning, turn off the heat, and transfer to a separate plate.
- Heat the pan, add cooking oil, then sauté finely chopped garlic and lemongrass until fragrant. Add the marinated octopus and cook for about 5 - 7 minutes until the octopus meat is firm. Then add the previously sautéed vegetables, mix well with the octopus meat, and cook for an additional 3 - 5 minutes until the vegetables and octopus meat blend together. Adjust the seasoning to taste. Finally, add a bit of ketchup and pepper to enhance the flavor and presentation of the dish.
