Today, I'll share a bit about how to prepare dipping sauce for two dishes: spring rolls/pho rolls and fresh rolls, so that your end-of-year parties will be even more extravagant and delicious!
Recipe for making dipping sauce for spring rolls, pho rolls
Ingredients: Golden roasted peanuts, peeled garlic, fresh chili peppers, sugar, vinegar, filtered water, fish sauce, fresh lime.
First, crush the peanuts and garlic together in a mortar, adjusting the quantity according to your family's taste preferences, then add a little water (about 4 teaspoons for every half a pound of roasted peanuts), grind until you get a milky white mixture.

Preparing dipping sauce for spring rolls, pho rolls
Remove seeds from chili peppers, finely chop, then mix well with peanuts and crushed garlic. Put 2 tablespoons of sugar and 4 tablespoons of water in a bowl, whisk until fully dissolved, then add 2 tablespoons of fish sauce and whisk evenly. Finally, squeeze lime juice, and add vinegar in a 1:1 ratio (1 tablespoon each), stir well. This is considered the perfect ratio for a sweet and sour dipping sauce, if your family's taste preferences differ, taste and adjust accordingly after mixing. Add the garlic - chili - peanut mixture into the dipping sauce bowl, gently let it float on top, it will be more fragrant and visually appealing.

Instead of using fish sauce like in spring rolls, fresh spring rolls will pair better with soy sauce. To make a delicious dipping sauce for this dish, you will need:
+ 1 thinly sliced shallot, golden fried
+ 8 tablespoons of hoisin sauce (usually used with pho)
+ Crushed roasted peanuts (or use 1 teaspoon of peanut butter as a substitute)
+ Salt
