How to make West Lake shrimp cakes:
Step 1:
- Combine wheat flour, tapioca flour, and 150ml water in a large bowl, mix well. Crack eggs into the bowl, whisk vigorously until the mixture becomes smooth, then let the batter rest for 30 minutes.
- Peel and wash the sweet potatoes, cut them into small strands, and soak in a diluted saltwater solution. After 15 minutes, remove the sweet potatoes, drain, and mix them thoroughly with the prepared batter.

- Peel and clean the carrots and papaya, julienne them, and soak in vinegar for 15 minutes. Then, drain the vegetables.
- Peel, clean, and finely mince the onions and garlic. Wash the chili peppers and finely chop them.
Step 2
- Clean the prawns, remove the legs and heads, and drain. Marinate the prawns with 1 tablespoon of seasoning powder, 1 teaspoon of salt, 1 teaspoon of sugar, and 1/2 teaspoon of pepper for 15 minutes.
- Add the prawns to the mixture of flour and sweet potatoes, mix well.
- Heat a pan with 3 - 4 tablespoons of cooking oil, scoop the mixture of flour, sweet potatoes, and prawns into the pan, adjust so that the prawns are in the middle, then fry until golden and crispy, evenly cooked. Remove and place on paper towels to drain excess oil.

Step 3:
- Prepare the dipping sauce: mix 2 tablespoons of fish sauce with 2 teaspoons of sugar, 1 tablespoon of lime juice, 1 tablespoon of filtered water, minced onions, garlic, and chopped chili. Season to taste, then add the prepared papaya and carrots.
- Arrange the shrimp cakes with lettuce and herbs on a plate.
