If you've ever attempted homemade yogurt without a machine and ended up with a disastrous batch – crumbly, unset, unevenly fragrant, and sticky – chances are you missed a step or two! This article will guide you on making yogurt without a machine, ensuring thick, velvety texture, consistent flavor, and no stickiness!
Yogurt is delicious, refreshing, and nutritionally beneficial for digestion. Making yogurt at home is simple, but many fail as their yogurt doesn't set and becomes sticky. Here, the PasGo Team shares methods for crafting yogurt at home without a machine, ensuring it avoids the mentioned issues!
1. Essential Ingredients to Prepare
- Fresh milk: 1 liter;
- Condensed milk: 1 can;
- Yogurt starter culture: 1 jar (regular type; if using self-cultured yogurt starter, avoid jars older than 7 days);
- Styrofoam box for fermenting; electric rice cooker; oven;
- Cup or jar for the milk.
2. Steps to Mix Milk for Every Yogurt-Making Method
Step 1: Dilute condensed milk with boiling water in a ratio of 3 cans of boiling water to 1 can of condensed milk. You can directly use the condensed milk can to measure the boiling water according to the given ratio.
Step 2: Stir fresh milk and water until the condensed milk is fully dissolved, then add 1 liter of fresh milk. Wait until the mixture of condensed milk and fresh milk cools down, then dissolve the yogurt starter culture into it. Allow the yogurt starter culture to cool at room temperature for a few hours; do not use cold milk for fermentation, as the culture dissolves better and the yogurt culture works more effectively when left at room temperature for a few hours.
Step 3: Ensure the cleanliness of the yogurt containers; it's best to rinse them with boiling water and let them air dry to prevent sticky yogurt. Alternatively, preheat the oven to 80 to 100 degrees Celsius, place the containers inside for about 2 to 3 minutes until they are dry and warm. Then, pour the milk mixture into the containers.

Step 4: Ferment the yogurt. There are various methods for fermenting yogurt; I'll introduce you to a few methods, such as the following:
3. Different Methods for Homemade Yogurt Fermentation Without Using a Machine
3.1. Method 1: Yogurt Fermentation Using Styrofoam Box
Pour warm water into the box, around 40 degrees Celsius, then arrange the milk-filled containers inside and ferment for approximately 6 to 12 hours. It's best to start the fermentation from the previous evening, and by the morning, you'll have delicious yogurt to store in the refrigerator for later use.

3.2. Method 2: Yogurt Fermentation Using an Electric Rice Cooker
Pour hot water into the electric rice cooker, arrange the yogurt containers in the pot so that the water only covers 2/3 of the yogurt containers. If it's winter, set the pot to warm mode; if it's summer, there's no need to turn it on. Let it ferment for about 4 to 6 hours. Remember not to disturb the pot during the fermentation process.

Yogurt fermentation using an electric rice cooker is very convenient.
3.3. Method 3: Yogurt Fermentation Using the Oven
Preheat the oven to 75 degrees Celsius for about 5 minutes to reach a temperature inside the oven of around 70-80 degrees Celsius, then pour in the milk. Warm the milk gradually to about 40 – 45 degrees Celsius. About 2 hours later, reheat the oven to 50 degrees Celsius for 2 to 3 minutes, then turn off the oven and let it ferment for an additional 1.5 to 2 hours. The total fermentation time is about 4 hours, and you'll have delicious yogurt.
